Extreme Banana Nut Bread 'EBNB'

This is a great recipe. I only used 1 cup sugar and used half cup olive oil and half cup unsweetened applesauce in place of the shortening. This time I baked it in mason jars at 325 for 50 minutes. It's is just as good as the loaf and you have servings for one or two in each jar as well as cute gifts. PS There is one MAJOR problem with this recipe -- cannot stop eating it. LOL

German Apple Cake I

I used to make a chunky apple cake in the eighties but lost the recipe so I'm really happy that I found this. I made a few changes. Used only 1/2 cup of olive oil, three eggs (I added the third to make up for some of the liquid) and just under 1 1/2 cups sugar (I included a small amount of brown sugar in that scant 1 1/2 cups), and I used five apples chopped into pieces. When I first saw the batter, I couldn't believe it would fill a 9 x 13 pan but once I added the apples, it fit perfectly. Then I sprinkled a little sugar and cinnamon on top. It came out soooo good. Took a little longer than 45 min but I think my oven temp is off. Wow. This is really delicious. And the inclusion of brown sugar gave it a nice dark color.

Basic Broiled Chicken Breasts

Baked Brown Rice

This very tasty. But 1 hr & 15 min is way too long. I baked it for 45 minutes and it was overdone. Next time I'll try 30 minutes. Aside from that its a great recipe.

Pressure Cooker Italian Chicken Soup

We really enjoyed this. I haven't used my pressure cooker in so long, I chickened out and put this recipe in the slow cooker and it was excellent. I went with what I had on hand which meant omitting the barley and lentils and salsa and replacing spinach with kale. Will definitely make this again. YUM!!!

The Best Meatballs

I never had the knack of making good meatballs until now. These meatballs are the best. I made some substitutions out of necessity - 1 1/2 # ground beef, 1/2 cup cheese, and 2 english muffins soaked in water. The meatballs came out tasty and light and just delicious. Thank you.

Scalloped Potatoes and Onions

Thank you Dorothy. This is outrageous. I can't believe how good it is. I love potatoes and now I have new terrific way to enjoy them. Tip for anyone who wants to add onion. I sliced it very thin but in the future I will mince it because the slices are too long. Thanks again for a great dish. Wish I could stop eating it :o)

Strawberry and Feta Salad

The only change I made was using mixed greens instead of romaine. I doubled the recipe and took it to a July 4th BBQ. WOW it was a big hit. No leftovers and a lot of recipe requests. Thanks MSCHEF Oh, I almost forgot the only raspberry vinegar I could find was raspberry balsamic. So I used that for the raspberry vinegar and also the regular balsamic vinegar. The salad was fantastic.

I followed this recipe, brushed oil mix over entire mushroom. Then I baked them, gill side up, at 425 for 25 minutes, then sprinkled with mozzarella cheese and baked for another 10 minutes. Delicious !

Gluten Free Lentils And Spinach over Pasta

I used chicken broth in place of water. Served it over brown rice spiral pasta and sprinkled with a little Locatelli cheese. Delicious, gluten free and filling. YUM !!

Red Cabbage and Apples

This is a terrific recipe. I just made this using half red and half green cabbage. I used 6 Tbs honey instead of sugar and 6 Tbs organic apple cider vinegar and it is delicious. Thanks Christy.

Greek Pasta Salad

Delicious. I used a box of rotini, powdered garlic instead of fresh, more tomatoes, more cheese, totally forgot the cucumbers and it was still great. A really nice change from regular macaroni salad.
