Thai Cucumber Salad

I've finally found a cucumber salad recipe similar to the one at my favorite Thai restaurant. I didn't add the cilantro, peanuts, or jalapeno, but I'm sure that would be great in there! I ate this with pad thai.

Lebanese-Style Red Lentil Soup

Very yummy! I sauteed the onion with a carrot first. The soup did get too thick for my liking, but I just added a bit of hot water to thin it out. I served this with Authentic Lebanese Fattoush from this site.

Authentic Lebanese Fattoush

This was full of flavor. I modified the dressing a bit--I did olive oil, lemon juice, garlic, salt, and pepper. I added cherry tomatoes and red onion. I agree that toasting the pita in the oven is the way to go. I'd recommend slicing it first into bite sized pieces and brushing with olive oil, red pepper, and cumin. The arugula gave this salad a nice kick. I served this with Lebanese-Style Red Lentil Soup for a healthy dinner.

Frozen Mojito

Good recipe for an easy mojito. I would add a bit more ice. I blend the rum, limeaid, and ice first and then add the mint. That way, the mint is in large chunks, like most mojitos I've gotten at restaurants. I made this once with regular limeaid (not frozen) when my sister brought the wrong kind over. It was decent, but very watery.

Apple Pumpkin Muffins

These were delicious. They got gobbled up almost as soon as I took them out of the oven. The apple and pumpkin made a wonderful combination. I had about 20 people over when I served them, and everyone seemed to enjoy them.

Key West Chicken

This was the best chicken I've ever cooked. I marinated it for about 5 hours before grilling. It was crispy on the outside, moist on the inside, and had a wonderful flavor. I served it with Grilled Sweet Potatoes, also from this site.

These were really good. The flavor was delicious. I ended up baking them for about 20 minutes instead of grilling. I omitted the sesame oil in favor of vegetable oil and didn't include water.

Spiced Pumpkin Dip

This was very good. We served it was pretzels and apples. I didn't include the orange extract and used cinnamon and nutmeg because I don't have pumpkin pie spice. This had a similar flavor to pumpkin pie.

Blueberry Blintz Souffle

We had this for Christmas brunch. All the kids loved it. We made with with raspberry sauce, instead of blueberry. (Frozen raspberries blended with sugar.)

Cider Cheese Fondue

This had a great flavor and was a nice alternative to cheese fondue with wine. Other reviewers have said they used baby carrots to dip, and no one I was with liked them with the cheese. Apples and crusty bread cubes were great.

Baked Oatmeal Squares

This is decent. The flavor is sort of strange to me--maybe because I accidentally added too much salt. I tripled the recipe and baked it for 5 minutes longer. The oatmeal stuck together for the most part, but didn't cut nicely into squares, which is too bad because I brought it to my office to share.

Curried Brown Rice Salad

Great mix of flavors. I used couscous instead of rice and didn't have nuts or onions on hand. I added chickpeas and only used yogurt, not mayo. A wonderful healthy lunch. Really good!

Tasty Tortellinis

I thought this was rather bland. I did not have garlic or black olives. I replaced basil with dill because I thought it would go well with the cucumbers I added. The leftovers that had marinated overnight did taste a little better, but this still wasn't a keeper for me.

BUSH'S® Vegetarian Barbecued Squash

I followed the directions pretty closely, but it was undercooked. I covered the squash the whole time, which might have been the problem. My fiance disliked it. He said that he had no idea how to eat it and ended up just eating the beans. I thought the flavors went well together and if I cooked it longer it would probably be a lot better.

Heather's Cilantro, Black Bean, and Corn Salsa

I served this at a party with chips and everyone loved it. I used cherry tomatoes, which were really good in there and made it a unique salsa. I also did not include avacado because I made guacamole as well. I put the leftovers in the fridge and made tostadas with them the next day.
