Chef John's Stuffed Peppers

I loved these green peppers. My six year old even loved them. I served them with additional white rice mixed with the sauce and peppers. I added about a cup of mozzerella cheese to the top of the peppers and melted in the oven for the last five minutes. I also used soy sauce because I love soy sauce with rice and stuffed green peppers.

Rempel Family Meatloaf

This was delicious! I didn't have buttery round crackers so I used reduced fat cheese nips instead and I didn't have steak sauce so I skipped that. My hubby also wanted me to stuff this meatloaf so I stuffed it with deli ham and mozzerella cheese. I know that I didn't completely follow the recipe and people get annoyed with that but I just wanted to say that this was the best meatloaf I ever had the way I made it. I think it would have been just as fabulous without stuffing it as well.

Avocado Feta Salsa

LOVE IT! This is a nice mix between salsa and guacamole. The cubed avacado is a nice change from ordinary guac. I made a double batch but used three avacados. I think the feta cheese is vital to this recipe so don't leave it out as another reviewer suggested! I did have leftovers since I made so much and put it in a chicken burrito which was fabulous!
