Buttermilk Pancakes II

These were the best pancakes I have ever made! They looked great, tasted great, and kept in the freezer for a week's worth of breakfast for my school aged son! I took the advice and didn't over stir them. That is definatly the key to successful pancakes!

Mulberry Muffins

They didn't last long! For some reason, mine stuck to the paper cups too, but the 3 that I made without the cups came out of the pan wonderfully (I didn't have enough cups). I used blueberry yogart instead of sour cream and apple butter instead of apple sauce, and vanilla. I put in some almonds just to get that almond taste. I also used Splenda and egg subsitute. It was all good! Will make them again!

#1 Pumpkin Spice Cookies

Excellent cookie! It is the combination of the spices, pumpkin and apple butter that make this recipe a real treat. As I was mixing this up I wondered how shredded carrots and Crasins would go, so I tried it! make them small. You won't need more than 2 to feel satisfied!

Wonderful, tasty sandwich! You can alter the ingredients, of course, to your family's tastes. But, don't skimp on the cranberries or turkey! I used leftover turkey and homemade cranberry sauce.

Super Sausage Gravy

Ha Ha Ha...what leftovers! I am not a fan of sausage, or sausage gravy, but my husband is. He has been looking for the "perfect sausage gravy and biscuits" for a while now. He found it this morning when I served him this! I used a pound and a half (had a half pound leftover from last Sunday's attempt by my husband), and doubled the flour and milk. I even liked it!

Irish Chicken and Dumplings

Tasty! My late Mother-in-Law made the best Chicken and Dumplings, but my husband liked this one almost as much. I put everything but the dumpling ingredients in the slow cooker and let it cook while I was at work. The first time I tried using the baking mix and turning it on high, but it made a mess. The second time I dipped out some of the broth and cooked the dumplings in a seperate pan. The consistency was fine that way.

Seven Layer Tortilla Pie

This was very easy to make, and very tasty! When I went to the store, I forgot to get the salsa, so I had to make my own. I just used some canned diced tomato with garlic and onion, some fresh diced onion, lime juice, cilantro, and the other 1/2 cup of the diced tomato called for in the recipe. My 8-yr old mashed the beans while I made the salsa. Everyone loved it, and so did I!

German Potato Salad

My husband wanted me to make German Potato Salad for a company lunch. I found this recipe. It was easy to change the servings and make a shopping list. But I "forgot" to make the salad, so he did it. His friends thought he bought it at a Deli! Thanks!
