Bananas 'N' Cream Bundt Cake

Reviewed: Jan. 2, 2009
I made this recipe exactly as directed with the exception of using pecans instead of walnuts. This was excellent - it tastes just like banana bread but has a lighter texture like cake. We will definitely make this again. Thank you for the recipe!

Berry Shortbread Dreams

Reviewed: Oct. 9, 2008
We loved these cookies! I used a bit more than 1/3 cup of jam - probably about 1/2 cup. And for the glaze I prefer to use half and half instead of water. Thanks for a great recipe!

Grilled Bruschetta Chicken

Reviewed: Oct. 9, 2008
I think this is a great recipe, even though I made a couple of changes to it. Personally, I think any Italian dressing would work as a marinade. Also, to the tomato mixture I added: extra virgin olive oil, vinegar, and some salt & pepper. Most definitely a keeper for our family. Thank you!

Oatmeal Date Cookies

Reviewed: Oct. 22, 2008
This is an excellent recipe, in my opinion. I made it exactly as written, except I used pecans instead of walnuts. I was looking for a recipe to use up some extra dates I had in the freezer, and these cookies were just perfect. Thanks for sharing!

Italian Sausage Soup with Tortellini

Reviewed: Oct. 27, 2008
I made quite a few minor changes to this recipe. I had some precooked ground sausage already in my freezer, so I just used that and sauteed my veggies in extra virgin olive oil. I added in 1/2 tsp. dried basil in step 2 and did not add in the fresh basil until the very end, right before I served the soup. I also substituted a 15 oz can of crushed tomatoes for the fresh tomatoes. I omitted the can of tomato sauce. Everyone in the family absolutely loved it!

These were so simple to make and so tasty! Will definitely make these again as appetizers. I could actually see eating these alongside some eggs for breakfast!

Simple Scones

Reviewed: Oct. 6, 2008
I used craisins instead of currants, and sprinkled in some vanilla - probably about 1 tsp. I also brushed the tops of the scones with an egg wash and then liberally topped them with raw sugar. I think it gives a much better crunch than white sugar. Thanks for a terrific base recipe! It's going to be lots of fun to play around with.

Chocolate Chip Banana Muffins

Reviewed: Mar. 30, 2009
I was definitely tempted to change up this recipe, but in the end I decided to remain true to the original recipe. Everybody here loves to add their own touches! Anyhow, I was quite pleased with these muffins. They were tasty, moist, and very easy to prepare. They really don't need any changes at all. Very good, thanks for a terrific recipe!

Corn Dogs

Reviewed: Nov. 1, 2009
Very easy and very tasty. This recipe is missing a couple of helpful tips - dry off the hot dogs before rolling in the batter, and put the batter into a tall cup for dipping. I left out the black pepper because I didn't think it was necessary. Everyone loved them!

Oven Fresh Seasoned Potato Wedges

Reviewed: Nov. 1, 2009
These were terrific! I used regular canola oil instead of olive oil because I needed a more neutral tasting side dish. Also, because I like simplicity, I just threw all of the ingredients onto the sheet pan and tossed them together with my hands. Worked out just beautifully. The recipe is only missing the reminder to flip the potatoes halfway through cooking time so that both sides can get browned.

Green Bean and Mushroom Medley

Reviewed: Dec. 1, 2009
This was a very nice addition to our Thanksgiving meal. I didn't measure the seasonings, just eyeballed them. I also diced the onions very small because I get grossed out by big slices of them in my food!

Creamy Au Gratin Potatoes

Reviewed: Mar. 26, 2010
We all really enjoyed this as a side dish. I left out the onions because nobody likes them. I also sliced the potatoes a bit thinner than 1/4 inch, and added a bit of salt and pepper to each layer of potatoes in the pan. I sprinkled bread crumbs on top before baking, and left the pan uncovered so they would brown. Delicious!

Calzone

Reviewed: May 20, 2010
I think this is a pretty decent recipe, and I will most definitely make it again. That being said, I did make some changes to the recipe: I let the dough rest for 30 min. after it came out of the bread machine because it was too elastic to roll out right away. I also folded in some garlic powder, salt, and crumbled Italian herbs into the dough before I rolled it out. I put garlic powder into the melted butter that I brushed on top, and I sprinkled grated parmesan cheese on top of that. I thought the calzone was just a touch too bready, so next time I will discard about a third of the dough before rolling it out to make the ratio more to my liking. This is a fun recipe to play with! EDITED TO ADD: I decided that I didn't want to throw out the extra dough, so I ended up splitting the dough in half to make 2 separate calzones for us all. Worked out beautifully and eliminated the waste!

French Baguettes

Reviewed: Oct. 25, 2009
I made this recipe as written. It was excellent and does not need any changes, in my opinion. I will, however, not roll the edges to a taper next time. I like my loaves to be a bit more uniform. A keeper for sure!

Souvlaki

This is a recipe that I go back to time and time again. It is a winner, no question about it. I always grill my shiskabobs on my stovetop grill and it works out beautifully. I've also tried this marinade on chicken and loved it. It's a heavy repeat in our meal rotation!

Wake-Up Casserole

Reviewed: Oct. 11, 2008
I thought this was pretty good, but way heavy on the cheddar. After seeing the consistency in the pan, I added 2 more eggs blended with a bit of extra milk, salt, and mustard. For me, those 2 extra eggs made the recipe much more balanced. I have also tried this with a variety of different breakfast meats and loved it.

Healthier Carrot Cake III

Reviewed: Nov. 15, 2013
I didn't care that this recipe was supposed to be healthier, I just wanted a recipe without pineapple! I used all purpose flour, and half brown sugar and half white sugar. I also substituted in a bit of nutmeg and allspice along with the cinnamon (I used a 1/4 tsp each). This was a delicious cake with a nice balance of carrot and spice flavors. Will make again for sure!

Chicken Cordon Bleu II

Reviewed: Nov. 4, 2008
I gave this recipe 5 stars even though I made a couple of minor changes, because the changes didn't affect the flavor at all. I was just trying to lower the fat a little bit! I browned the chicken bundles in olive oil instead of butter, and I used milk instead of heavy whipping cream. Excellent flavor, terrific recipe, and nobody (myself included) could tell it was a lower fat version! A keeper for sure.
