Rick's Special Buttercream Frosting

I used half butter and half shortening. I beat the butter and shortening for 10 minutes on the recommendation for other reviewers here. The taste of the icing was good, but it was too loose. Even when I added extra powdered sugar to try to stiffen it up, the frosting was just too loose. I feel like beating the butter and shortening for so long is what was causing the looseness of the frosting.

Heavenly White Cake

I thought this cake was just ok. It was fairly time consuming to make and the end result, in my opinion, was not really any better than box mix. As others have stated, the cake doesn't really rise very much, which made for some funny looking cupcakes. I did have enough batter to make 24 cupcakes and still have some batter left over.

Cinnamon Rolls II

The dough was really sticky after adding the amount of flour called for in the recipe. I had read others' reviews that said the dough would be sticky and not to add more flour, but to just work the dough until it wasn't sticky. After working the dough for 45 minutes, it was still just as sticky/loose. I added more flour, but then my rolls wouldn't rise. I let them sit out for a couple of hours in a warm place, and they didn't rise. All of the filling in the rolls melted out and caramelized in the bottom of the pan during baking. I would never use this recipe again.

Two-Tone Cheesecake Bars

Day Before Mashed Potatoes

I made this recipe for Thanksgiving last year. I did a trial run the week before Thanksgiving to see how they would turn out. I had read some reviews saying to add milk before baking. I didn't add any milk for the first batch, and the potatoes were a little dry after baking. So the second time I made them, I added some milk before baking, and the potatoes were perfect after baking. Great recipe.

Super-Delicious Zuppa Toscana

Great soup! I didn't have any spinach so I left that out. That was the only thing I changed. It is not supposed to be a thick soup, it is a thin soup, so do not worry about adding corn starch or anything to thicken it. I used red potatoes and left the skin on so that seemed to help hold my thin potato slices together while they cooked.

Banana Sour Cream Bread

This is the BEST recipe for banana bread. There is no need to make any changes to the recipe. Make it exactly like it says, and it will turn out amazing. Everyone loves this banana bread and says it is the best they've ever had.

Puppy Chow

I thought this recipe was great! I didn't add any butter as other people had suggested, and it turned out wonderful. I was kind of worried about not adding the butter as that is how I usually make it, but it tasted the same, and it's less fattening!
