Black Magic Cake

This was really really good. I made this for a friends birthday party that was also a halloween costume party. The coffee gives this a dark chocolate ALMOST bitterness that is amazing. This moist and chocolaty cake is perfect for the coffee lover and the chocolate lover. I baked it in 2 8 inch cake tins and then "glued" them together with buttercream (I used the "Best Buttercream Frosting" found on this site). Only I added chocolate and coffee to the recipe. Yum!

Sausage-Stuffed Eggplant

This was so yum! I made it for two people who have never had eggplant before and were pretty skeptical. They loved it so much! And have since made it for themselves. I follwed the recipe pretty much exactly. I used spicy Italian sausage with cheese and changed the herb mixture a little. 5 Stars!

Spicy Lamb Patties

These were good but I did make a few changes. First I used a fresh green chili pepper instead of the dried chili flakes and it gave it a nice, subtle heat. I added an egg to help hold everything together. Also instead of the curry powder I added paprika, adding a nice smoky flavor. I added 2 minced mushrooms as well because they needed to be used and they give the patties a nice texture and I think they helped keep them moist on the inside. I served these with couscous with toasted pine nuts and I wilted some spinach and cabbage in the pan I cooked the patties in and it gave the greens a really nice flavor.

Beer Pancakes

These are the best pancakes I have ever had! I found that the batter was too wet and runny so I added an extra handful up whole wheat flour. I also used about 1/2 cups of whole wheat in the initial batter. Wow, these were good. They dont taste like beer they just taste great! My fiance loved 'em. I think I might make these for dessert with ice cream and some fruit topping. Great recipe!

Butternut Squash Bread

I really enjoy this recipe. In a world that eats so much wheat it is nice to know that you can involve something more in your bread. This bread is fluffy and moist. My boyfriend loves it and is a frequent request. It is well worth the effort and I have already made it many times! I definitely recommend it. Thanks for the recipe!

This was a great naan bread. Nice and chewy and just a little hint of garlic. I made them just as it states only instead of using a grill, I fried them in some butter in a frying pan. They were nice and bubbly and just perfect. Lovely.

Grilled Chicken with Herbs

Yum! This was delicious, only I did make a few changes. The first and most significant was I used white wine instead of balsamic vinegar. The flavor from the wine went really well with the mixture of herbs. I used all fresh herbs and added a bit more then it called for. I poked holes in the tops on the chicken thighs and let them marinade for 24 hours. Then I baked them on about 190 degrees Celsius for about 15 minutes and then grilled them in the oven until they went brown and crisp on top. The result was succulent, flavorful, and crispy chicken. I served this with pasta with a garlic white wine sauce and a nice fresh salad on the side. Thank you for the recipe, I was defiantly make this again!

Baked Stuffed Tomatoes

I really enjoyed this recipe, but I did make a few changes. Instead of using instant rice I made some brown rice in advance and added it instead. This gave it a nice nutty flavour. Also I browned the meat in garlic and onion. Before stuffing the tomatoes I added small cubes of cheddar cheese to the stuffing so it melted but stayed in cubes. Then I topped the tomatoes with cheddar cheese before putting them in the oven. I baked them until the cheese was nice and brown. Yum!

Easy Gravy

This was excellent. Instead of adding the flour as directed I put the required amount plus extra and shook it in a jar with cold water, really well. Then slowly added the flour mixture to the hot gravy, stirring slowly. It thickened up nicely. Also your not supposed to boil miso so I added after it had boiled. I added kelp as well because miso and kelp combined remove radiation out of the body. Enjoy.

Breakfast Calzones

These were delicious, the family loved them. I made some significant changes though. Instead of using the bread dough it asked for I used a home made sweet dough recipe, and flavoured it with sweet paprika and garlic powder. Instead of using pizza sauce, I took tomato paste and added tomato juice to bring down the thickness of it and then spiced it with an italian spice mix. Also we added some banana peppers to spice it up a bit. We used spicy italian sausages and also fried some green onion in there with it. Alot of changes but these were worth it.

Outrageous Chocolate Chip Cookies

Mmmmm, these cookies were delicious. The texture was nice and fluffy. I added an extra 1/2 cup of chocolate chips and they turned out very well. Nice and chocolate filled. Also its good to roll them into a ball and press down slightly on the tops and they hold form well, even on a greased pan. Great Recipe!

Broiled Herb Butter Chicken

Very delicious! Although I found it called for more butter then necessary resulting in a grease fire in the pan. This added a nice flavour and the peices that had the fire close turned out the best!
