Beef and Mushroom Lasagna

I still added a carton of Ricotta cheese to the soup and milk mixture because I love Ricotta in Lasagna. Also, used Traditional Prego sauce and added fresh mushrooms to the sauce instead. If you love mushrooms, you must try this Lasagna!

Slow Cooker Coq Au Vin

I've had real Coq Au Vin made by a French woman and this was definitely not the same. However, it was still really good! It makes a rich gravy and the chicken was so tender. I used chicken thighs and didn't even cut the fat off of them. Wonderful with mashed potatoes. I will be making this again!

Slow Cooker Cranberry Roast

My husband said this is one of the best dinners I have ever made! However, I thought the gravy was really runny and would not have been good on mashed potatoes. I made some red potatoes with rosemary in the microwave anyway. Also, I used a 2 lb pork loin and cooked it for 7 hours. I used half the onion soup packet and 3/4 can whole cranberry sauce. It was wonderful!

Slow Cooker Beef Stew

I think this is a great recipe for stew! The marinade was wonderful. I like my stew with broth so I also added a cup of water and a whole soda can size of V-8. It was perfect! I cooked it 10 hours. The Jalapeno's were a unexpected spicy twist! Hubby didn't like them though. I think next time I will leave out to make it more traditional.

Fried Rice Restaurant Style

Excellent! I used leftover white rice and didn't have any carrots but added chopped white onion and I cooked everything in bacon grease. I added a lot more than 2 tablespoons of soy sauce. I just kept adding until the color looked like it does in restaurants!

Carol's King Ranch Casserole

I made this for the first time when friends came over. They loved it! I sauted the onions and red peppers to soften them in butter first and then added the soup ingredients. I also used ranch style beans and drained them because they are my favorite! I used Rotel and didn't add the chicken broth to the mixture to make it less runny. I also used corn tortillas and only 2 cups of cheese on top. Baked for 45 minutes based on other reviews that it needs to be cooked longer. Added sour cream to the servings when it was dished up. Yum!

Sheryl's Corn and Crab Chowder

This is the best Chowder recipe on this site! However, the roux took more like 30 minutes instead of 10 so be sure to give yourself plenty of time to make this. I used smoked salmon instead of crab and shirmp. Since it's already cooked, I just added it in at the end. I also omitted the bacon, bell pepper, brandy, cayenne pepper and creole seasonings.

This turned out pretty good. Albeit it's kinda a glorified hamburger helper. I made a couple of changes. I only used 1 lb of hamburger. I don't like a ton of meat in anything. I think this made it saucier as well. I also only used sharp cheddar cheese. No mozzarella. We made this years ago and it didn't have mozz in it. But I lost that recipe so thought I would try this one. I think I might add a dash of red pepper next time for a little more kick!

Spicy Beef Curry Stew for the Slow Cooker

If you want this to be spicy use jar jalepenos instead of fresh. I made as stated the first time and was disappointed that it wasn't spicy. The second time used the jar ones and tomato puree like another reviewer suggested and it tasted and looked more like what you would get in an Indian Restaurant. Much thicker. But the beef broth was a little overpowering. I will water it down next time.

Spinach Chicken Enchiladas

Nutmeg in Enchiladas is weird. It was really overpowering. If I ever make these again I will use chili powder or maybe cumin instead. I also boiled my chicken and used a mexican cheese blend. Mozerella cheese just seems Italian to me, not mexican.

This stew tasted more like a mushy pot roast to me. I like for stew to have some broth and tomatoes. I will try a different recipe next time.

Halibut Weaver

I don't know if it's because I didn't cook enough halibut or if because I used Miracle Whip instead of regular mayo, but I did not care for the taste. All I could taste was warm miracle whip! My husband and his friend loved it though.

Simple Salmon Chowder II
