Hard Times Creamed Tuna

Reviewed: Jul. 2, 2014
thank you! I loved this growing up and was trying to find the recipe that uses milk and not condensed cream soups and this is it! The only change I make is to add fresh or frozen peas.

Snickerdoodle Cake

Reviewed: May 20, 2014
Good cake, easy to make and it does taste like a snickerdoodle. I didn't want to wait for butter to soften so I used coconut oil instead. The cake came out a little dry, but I'm not sure if that is due to my recipe change or 25 min may have been too long for my oven, so I'm not deducting any points for that. Anyway, it is still quite enjoyable! I doubled the frosting recipe, which I reccommend for the 2 layer cake because I had just enough frosting left over to do a little piping around the edges and I don't think it would have been enough to cover the cake otherwise. It was perfect spreading consistency and I didn't even need to add any milk. But, I think next time I will add more honey and decrease the butter a bit and add some milk or cream to get that good consistency, but that's just a personal preference, most buttercream recipes are too buttery for me.

Smooth Double Chocolate Frosting

Reviewed: Oct. 11, 2013
Just as the other reviewers stated, this is crazy delicious. I didn't have white chocolate chips so i just doubled up on regular chocolate. i made the frosting first then let it chill in the fridge while i baked the cake so by the time it was cooled and ready for frosting it was at the perfect consistency. I, too, thoroughly enjoy eating this on its own, sans cake.

Chili Cream Cheese Frosting

Reviewed: May 26, 2013
Very good on chocolate cupcakes! But for the life of me I can not find ancho chiles pepper anywhere. I used chipotle chile pepper, but someday I would like to try the recipe as it is written.

Roasted Garlic Lemon Broccoli

Reviewed: May 26, 2013
I have made this several times and love it very much. I make it with baked chicken and after seasoning the broccoli, I like to throw it in the pan with the chicken for the last 15-20 minutes. It cooks nicely together and fewer dishes afterward. Its a good, somewhat intense flavor, so I bet it would work well for those who aren't normally broccoli fans.

Glazed Apple Cookies

Reviewed: May 26, 2013
Mmmmm, yummy stuff! The end result was more muffin or cake-like than cookie, though. I found it's best to cook them on wax paper to avoid sticking to the pan. Took these to work and they were very well received.

Roasted Sage Broccoli

Reviewed: May 26, 2013
This was so good! I used fresh broccoli and ground sage because that is what I had. The flavor was light, but so tasty and it didn't overpower the natural yummyness of the broccoli. I will definitely make this again.

Sweet and Spicy Sweet Potatoes

Reviewed: May 26, 2013
I followed the recipe exactly and enjoyed these very much. They did come out a bit dry though, so I think next time I will try covering them for the 1st 15 min and see if that helps.

Best Chocolate Chip Cookies

Reviewed: Feb. 18, 2013
These are crazy good! I've always had a problem with my cookies flattening out, but these are a happy, puffy shaped cookie! I didn't feel like waiting for butter to soften so I replaced it with coconut oil and they still came out great.

Six Can Chicken Tortilla Soup

Reviewed: Aug. 1, 2011
This is so freaking good, I make it all the time! I followed other suggestions and added garlic powder, cumin and chili powder and replaced one can of chicken broth with one can of low sodium cream of chicken soup. I've made it with canned chicken and it is still pretty darn good, I'd say 4.5 stars, but if you have time to pick up a rotisserrie chicken from the store, do it! That definitely makes it a 5 star recipe.

Tuna Noodle Casserole from Scratch

Reviewed: May 17, 2011
The old fashion, canned mushroom soup version is the one I grew up on and thought I loved. But after making this version, I will never go back (sorry mom). I followed the suggestions and added extra herbs and seasonings. So good!

Bruschetta Chicken Bake

Reviewed: Nov. 2, 2010
For some reason I found this to be so much more delicious as a leftover than fresh out of the oven. I think next time I make this I will just wait a day before eating it. Also added some zucchini, which made it pretty darn tasty, I think.

Sandy's Casserole

Reviewed: Apr. 1, 2010
This was really tasty and very easy to make. I replaced the mushrooms with broccoli and would probably like to add more veggies next time. I followed other's advice and stirred it half way through baking and had no problem with crunchy noodles. This is a very stick to your ribs kind of meal, so I probably can't make it too often, sadly.

Fluffy Peanut Butter Frosting

This was very tasty, but very greasy too. I think next time I would use less or zero butter.

Apple Pie by Grandma Ople

Reviewed: Nov. 24, 2008
Grandma Ople sure knew how to make a delicious apple pie. I added vanilla, cinnamon and nutmeg as others have suggested, but otherwise I followed the recipe exactly. It was easy. I liked pouring the butter mixture through the lattice crust, that was fun.

Spinach and Feta Pita Bake

Reviewed: Oct. 9, 2008
This was pretty good and easy. The sundried tomato pesto was a bit overpowering for my taste. I think next time I will use regular pesto and just add a few sundried tomatoes on top. And add some mozzerella cheese too.

This was delicious and super easy. I didn't have rice crispies so I crunched up some townhouse crackers instead and it was grand.

Grilled Sausage with Potatoes and Green Beans

Reviewed: Aug. 17, 2008
I made this twice, once in a 9x13 pan the oven with cheddar brats and once wrapped in foil on the grill with regular bratwurst. Both times it was delicious, but I think I will always use cheddar brats from now on. I love the cheesy addition.

Black Beans and Rice

Reviewed: Jul. 18, 2008
This is good stuff and really easy to make. I didn't want to open a can of tomato sauce just for one tablespoon, so I added salsa instead. I really like the little kick it gave, I think I will always make it this way.
