Coconut Poke Cake

Reviewed: Jan. 23, 2014
Cream of coconut where have you been all my life?! Awesome recipe - though I did omit the sweetened condensed milk and made my own whipped cream. I also added coconut extract to the cake batter and to the whipped cream. This cake tastes even better after it sits in the fridge for a day. Thanks for satisfying my coconut craving! :)

Shepherd's Pie VI

Reviewed: Dec. 19, 2009
This was delicious! I followed other reviewers recommendations and added 1/4 cup Worchestershire to meat. I omitted beef broth and added 1 packet of beef gravy and 1 cup of water. I also added 1 glove of garlic. I sauteed all of the onion together and put 1/4 of it with the mashed potatoes - to that I added about a cup of sour cream, cheese, salt and pepper. I topped this with lots of cheese! I loved the mashed carrot - I did not put a layer all around the dish, I put dollops of carrot randomly around. It was nice digging in and finding a carrot surprise! I also added a bag of frozen mixed veges. Boyfriend loved this (his first time having Shepherd's Pie!), will definetely make again. Thanks Jacquie!

Slow Cooker Chicken and Dumplings

Reviewed: Dec. 19, 2009
Great recipe. I only made one change - instead of refrigerated biscuit dough, I used Bisquick to make dumplings instead. This went in my slow cooker on low for 9 hours. Only recommendation - watch how much onion you put in, I think my onion was WAY too big and the dish was too strong with onion flavor. I will scale down my onion next time I make this.

Slow Cooker Beef Stroganoff I

Reviewed: Dec. 22, 2009
Great stroganoff! I made a few changes though. I used 1 1/2 lbs of stew meat, I put 3 cubes of beef bouillon in 2 cups of water along with the golden mushroom soup. 10 minutes before serving I mixed in 8 oz. of cream cheese and 1 cup of sour cream - this thickened the sauce and made that classic stroganoff flavor really come out. If I had extra mushrooms on hand, I would have definetely sauteed and added them to the dish. I served this over egg noodles and everyone ate it up!

Salmon Cakes II

Reviewed: Mar. 28, 2011
I don't eat fish at all and I actually ate these! Not fishy at all, but it did need a sauce - I used the Lemon Sauce for Salmon Patties recipe found on this site. A perfect pair! Everyone in the house ate these up. Will make again!

Fool proof recipe. You can't screw this one up! This has been the same recipe used in our family since I was a kid. We change up the spice mixture to our liking. Delish! Don't forget the whipped cream!

Sweet Restaurant Slaw

Reviewed: Apr. 4, 2011
Awesome 'slaw! This was my first time attempting to make coleslaw and it came out great. It was good the night I made it and even better the next day. I ran out of onions so I used onion powder instead, mayo instead of miracle whip, olive oil instead of vegetable oil, triple the vinegar, 1/3 c sugar and omitted poppy seeds. My ten year old who hates coleslaw ate two helpings - definitely a keeper! Thank you!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 28, 2011
WOWZERS! Awesome recipe. My chicken came out moist and juicy - everyone raved about it! I did find it to be a tad on the salty side, so I will cut back on it next time. No more store bought roasters for us, I will use this recipe from now on. Thanks a lot!

Campbell's® Green Bean Casserole

Reviewed: May 20, 2011
Great basic green bean casserole recipe. You can do so many things with this - add cheese, fresh mushrooms, fresh green beans and the list goes on and on. We love this recipe with extra french fried onions and french cut green beans.

To Die For Blueberry Muffins

Reviewed: May 26, 2011
This was my first attempt at homemade blueberry muffins. They came out wonderful! They are moist and delicious- just perfect. The only thing I changed was brown sugar instead of white for the crumb topping. Will be using this recipe in the future for chocolate chip muffins. Thanks for the great recipe!

Sweet Potato Pie I

Reviewed: Jun. 18, 2011
First time eating and preparing a sweet potato pie. I do not have anything to compare it to but it was delish! I took other reviewers suggestions and added 2 tsp fresh lemon juice, 3tbs flour to thicken, 1/2c brown sugar, 1/2c white sugar and substituted evaporated milk for milk. I used 3 large sweet potatoes and it was the perfect amount. I also found the potatoes to be very "stringy" so I pushed them through a mesh strainer before combining with the other ingredients. Even my 10 year old son loved this pie - will make again. Thanks for a great recipe.

Amish White Bread

Reviewed: Nov. 16, 2011
This is phenominal. I made my first loaf of white bread Sunday using another recipe and it was okay. I made my second and third loaves of bread yesterday (whole wheat) and they were okay too. I made this recipe today (using my Bosch stand mixer) and it is so delicious - we ate half of one loaf already. If you have not made this yet, you must! Thanks for a great recipe.

Tres Leches (Milk Cake)

Reviewed: Dec. 20, 2013
This cake was amazing! I made it as written with the exception of soaking the cake overnight once I added the milk to the cake. The only thing I did not like was the gritty-ness of the granulated sugar in the whipped cream. Next time I will use super fine white sugar and see if that helps. The cake was very milky but held its shape and the whipped cream rounds out the whole cake. Simply divine - will make this again.
