My favorite things to cook
I like to cook when camping...the standards are lower in the wilderness and my food will seem to taste better to others. I have also become quite the fan of the Slow Cooker...people are impressed when they asked me how long it took me to make something, and I am able to say "a little more than 8 hours...".
My favorite family cooking traditions
I love the all day Thanksgiving meal that starts in the morning and ends in the evening. I love the great food my mom and my aunts cook at all family and holiday events. When I think holidays, I think food.
My cooking triumphs
I can make fried rice that impresses my very discerning wife. I am able to poach eggs. I can follow recipes real well, and have made a ton of recipes from Allrecipes, including: Asian Style Country Ribs, Good for You Greek Salad, Creamy Pea Salad, Savory Herb Rice, Avocado-Lime Shrimp Salad, Pulled Baby-Back Ribs Benedict, Awesome Slow Cooker Pot Roast, Mom's Cucumber Salad, Kathy's Delicious Whole Slow Cooker Chicken, Spinach and Potato Frittata, Slow Cooker Adobo Chicken, Crunchy Pea Salad, Crispy Cucumbers and Tomatoes in Dill Dressing, Eggs Benedict with Salmon, Wildfire BBQ Beef on Buns, Hearts of Palm Salad, Grilled Tuna Steaks with Grape and Caper Salsa, Honey Mustard Grilled Chicken, Byrdhouse Marinated Tomatoes and Mushrooms, Carol's Chicken Salad, Cashew Raisin Rice Pilaf, and Pork Chops Stuffed with Smoked Gouda and Bacon....mmmm....bacon.
My cooking tragedies
I almost burned down the kitchen...my wife exaggerates the story now, but not by much. My wife also finds it tragic how I am a sucker for kitchen gadgets....especially the ones I see on TV! That is probably the reason she made us get rid of cable. Anyways, regrettable gadgets I own(ed) are a Magic Bullet (broken), Vidalia Chop Wizard (love it), George Foreman Grill, Quick and Easy Pasta System (it is neither Quick or Easy), Sham-wow, Flipfold, and too many camping cooking gadgets to mention. I also own a Snuggie.

Cashew Raisin Rice Pilaf
This tasted great! I liked the different textures and flavors that resulted from mixing the different types of rice, veggies, cashews and raisins. For some reason, I always have trouble making rice, so to make sure I the rice came out correctly for me, I made the the wild rice first in a rice cooker, then put the wild rice in the refrigerator and cooked the long grain rice in the rice cooker. I simmered the butter, onions, and carrots for fifteen minutes, then I combined all the ingredients in the end. The dish looked great....I should have taken a picture but I was too hungry to take time out to take a pic first.
