Ratatouille Bake

Apple Crisp II

Delicious! I misplaced the apple crisp recipe that I've used for years so I gave this one a try. The result was the best apple crisp I've ever made. I used golden delicious apples and the only change I made was to eliminate the 1/2 cup water, as recommended by other reviewers. It turned out perfectly!

Spicy Maryland Crab Dip

I love, love, love this recipe! The only change I make when preparing it is to use more hot sauce--about 8 dashes. This dip is always a huge hit when I make it for parties--there is never even a tiny bit left. Thank you so much for sharing it Laura!

Easy Chicken Enchiladas

I give this recipe 5 stars but feel it's really only that good when using less cream cheese than the recipe states. I tried this recipe several months ago and have been making these enchiladas regularly ever since then. I decreased the amount of cream cheese to about 3 ounces. The first time I made the enchiladas I followed the recipe exactly and the cream cheese was way too much. Also, I took the suggestion of another reviewer and now add some enchilada sauce--I pour a little in the bottom of the dish and a little on top before sprinkling the cheese. Mmm, so good!. My family loves these!

Marinade for Chicken

Absolutely delicious! I made this marinade exactly as the recipe stated. I wouldn't change a thing about it--I think it's perfect. Used it for chicken, which I marinated overnight and grilled for guests. Everyone raved about it!

Wheat Germ Whole-Wheat Buttermilk Pancakes

These pancakes were delicious and quite quick and easy to make! I used regular whole wheat flour because my store didn't have the pastry flour. Also, I like my pancakes sweet so I added 1/4 cup of Splenda.

Amish Macaroni Salad

As recommended by other reviewers, I cut the sugar to 1/4 cup, used an entire 16 oz. box of macaroni, and used real mayo. I also made this another time but used whole wheat macaroni and a 1/4 cup splenda instead of sugar so my diabetic husband could enjoy it guilt-free. Both ways I made it were excellent! I will make this again and again!

Orange Mini Muffins

These muffins smelled incredible when they were baking but I found the taste to be quite bland. I took the advice of one of the other reviewers and used orange icing drizzle on top, which helped the taste a bit, but I still doubt I would make these again.

This is a very good recipe for Shepherd's Pie. You can definitely taste the thyme pretty strongly. Next time I'll use just a bit less of it.
