Uncle Dank's Gumbo

First time ever trying to make Gumbo and I was surprised by the outcome! I was worried by the light color, but when we began eating the color didn't matter.

Curried Coconut Chicken

Overall I thought this recipe was great! I added a little more Curry Powder and Cayenne Pepper after tasting the end result. I like spicy curry dishes!

Alternative Baked Salmon

A nice alternative when it come salmon. I did end up using fresh garlic and real dijon mustard just because that's what I had on hand.

I was confused on the 1 sugar pumpkin, but learned from other recipes that you should get a cup of puree. It came out a little liquidy at first however it made an excellent pie. I even made a homemade pie crust, I wouldn't feel right making homemade pumpkin pie without a homemade crust! I'll be using this in the future for Thanksgiving.

Unbelievable Rolls

A bit of time but these were amazing! My family enjoyed them a lot and I had some extra dough (given that I doubled the recipe) and made cinnamon rolls with them! Overall a keeper.

Good Old Fashioned Pancakes

Pretty darn good. I would have to agree that they are better than bisquick pancakes, but I will probably look at ways to fix the original recipe to fit my personal taste.

Easy Polenta with Tomato Sauce

This tasted great! I had my first try of polenta at school and loved it! This was a good recipe, I'll agree it's a bit runny... but I didn't mind it much. Taste great with grilled zucchini, squash and bell peppers on the side!

Zucchini Corn Fritters

I tried the revised version from up top and did 2 egg whites. Tasted pretty good, but overall I don't think it is worth making again... only made it to get rid of some old cooked corn and old zucchini.

Megan's Granola

This recipe was great! I love this granola, however I did switch up the recipe in one way. Instead of pecans I put in raw pumpkin seeds. But overall great recipe, my family kept picking at the cooling granola everytime they came into the kitchen.
