The first time I made this recipe I followed it exactly as written and the pancakes were excellent. I've made it many times since then and my preference is to add a tiny bit more milk to thin the batter slightly. This is a perfect base for any type of pancake you can imagine. My favorite is to add mashed bananas and toasted pecans to the batter.

Chewy Chocolate Chip Oatmeal Cookies

I'm usually awful at making cookies from scratch but this recipe came out absolutely perfect for me. If you don't want your cookies to spread, you do not have to change the recipe by adding flour or oatmeal. To keep the cookies super thick, just chill the dough before baking and make sure your cookie sheet is at room temperature or colder. I experimented with baking these cookies in different ways and my personal favorite is with cold dough on a hot cookie sheet. That combo kept the centers thick and chewy but allowed the edges to spread a bit while baking so they got a little crispy.

Blueberry Cream Muffins

I decided to make this recipe for my Grandma because she loves blueberries so much. The only alteration I made to the recipe was to increase the amount of blueberries because I found a container of huge, beautiful berries at my local grocery store and I wanted to use them all up. I cook a lot but rarely do any baking, so I was a bit surpised that these muffins came out delicious and pretty on my first try. I'm not really a fan of blueberry muffins, but I ended up eating three of them before packing up the rest. Grandma really loved these muffins as well. Thanks for a great recipe!
