Basil Pan-Seared Scallops over Pasta

This was very yummy! I used small scallops that we gathered ourselves during scalloping season. I also used spiral noodles and fresh garlic instead. This, for me, was wonderful and simple and tasted like something I would order at a resturaunt. A must try!

Classic Macaroni Salad

Red Wine Flavored Beef

New Red Potato Salad

This is a very good potato salad. I didn't have green onion so I used yellow onion instead and I used about a 1-2 teaspoons of sugar to tone down the bitterness of the vinegar as suggested by a previous review. I think next time I will use less vinegar and less mayo, but otherwise a very good recipe.

Charline's Sweet Potato Casserole

This was very yummy like a dessert. I too next time will use only half the sugar and butter that goes into the casserole. The butter was leaking out of it on the plate. Otherwise very good.

Scallops with White Wine Sauce I

I was scared while I was cooking the sauce because the vinegar smelled horrible, but WOW when it was finished it was a very yummy sauce! I used the small scallops I got scalloping over the summer and I cooked them in a pan with butter instead of broiling them. I also cut back on the butter using only 5 tablespoons for serving 6. My husband loved it too. I will definetly make this again next scallop season!

Oxtails with Gravy

This was a very tasty recipe that my husband and I enjoyed very much. I don't like using the grease or shortening in the gravy though, and I don't think it needs it. Next time I will just use the broth with the flour only to make a gravy, like in the smoothered porkchops recipe on this site.

Easter Breakfast Casserole

This was very good! I pre-cooked my bacon as well and also added cheese to the top at last 10 min. Then added fresh cut scallions to the top and served with sour cream. Perfect!

Flatlander Chili

This was a very good chili recipe. The only thing I added was hot sauce to make it spicy. A real crowd pleaser, and much better then the canned stuff. I will be making this recipe again!

Grandma's Lemon Meringue Pie

This was my first pie made ever, and it turned out good. I did end up with droplets on the meringue which I now know is from over cooking the pie. I should have made little peaks on top of the pie so that the tips would brown by the end of the 10 minutes, but instead I spead it smooth all over and it took longer for it to brown. I also didn't add any zest because lemon peel doesn't sound good to me. This was a very yummy pie and I will make again. Thanks Grandma!

Shrimp Fettuccine Alfredo

This was a good recipe. Olive Garden's alfredo is my favorite and this was far from it, but it was yummy. My sauce thickened well and this is why. First of all I used real shredded cheese. It was a blend of parm.,romamo, mozz.,provolone(publix brand). Don't use the parm. cheese in the can that you put over spagetti or it won't thicken. Second I used half heavy cream and half half-and-half(as someone else suggested). And last, do add the shrimp butter and garlic at the end so the shrimp do not cook the whole time the sauce does. Most importantly, be patient. It takes a good 20 minutes of stirring for sauce to thicken, and will continue to do so after it starts to cool. Good luck!

Floating Island Punch

I made this punch for a bridal shower and followed the sugg. of previous reviews. I omitted the sugar water, didn't need it. I used pink lemonaide and fruit punch concentrate, 2 liters of cranberry ginger ale, 1 liter carbanated water, and orange sherbert, sliced oranges with cherry on top, but I didn't put the rest of the cherries in it. I also didn't add the ice.It was so good people were asking for the recipe. I will def. make it again!

Mom's Macaroni and Cheese

This was sooooo yummy!!! Must make for Thanksgiving! I followed the directions but added a little more cheddar cheese and used Panko bread crumbs instead of regular bread crumbs. Absolutely perfect! I also made sure my milk was warm before adding it to the flour mixture and constantly stirred it.

Stuffed Bell Peppers

Very delish recipe! I made it just like the recipe said and it turned out perfect! I used Morning Star crumbles for the vege protein and you couldn't even tell it wasn't real ground beef. My hubby loved them too and he is a meat kinda guy. Can't wait to make it again soon.
