Saucy and Slightly Spicy Zucchini Saute

Insanely Amazing Jalapeno Cheese Dip

This IS delicious. I used a bit more of the cheddar cheese and mixed in diced fresh jalapenos to make a grilled cheese sandwich.

Sweet Pork Chops

Easy and tasty...my kind of recipe. The sweet gravy was very good on mashed potatoes but I'm thinking I might like it even better over rice. I used flour to thicken the gravy instead but that's just personal preference.

Simple Ranch Chicken Macaroni Salad

Nice version of the usual Macaroni Salad - although I used farfalle pasta. I just used bottled ranch dressing and omitted the mayo...also a little of the liquid from the olives added to that special taste.

Grilled Peanut Butter and Banana Sandwich

I really thought this was a "5" but I made a few changes from the recipe - I used Skippy Natural with Honey Pnut Butter and spread the outside of the bread with mayo plus added some to the inside as well. The nice crunchy, grilled bread was a good contrast to the creamy, gooey middle. This is a tasty lunch treat - not just for breakfast!

Creamed Beef for SOS

Not a new recipe to me - but one that I hadn't made in a long time. One tip - if you let this sit and don't serve immediately, be prepared to add more milk. I also upped the flavor a bit by using finely diced red onion browned with the beef and added a small amount of worcestershire sauce plus fresh chopped parsley. Served over toast with sliced fresh tomatoes, this made a very satisfying meal.

Sesame Shrimp

Really tasty! With vegetables added and served over rice it was a complete and quick meal. I used broccoli, red onion and yellow pepper - sauteed quickly until crisp tender and then added the shrimp AND the marinade.

Quick Chicken and Noodles

I'll agree that this was a bit on the bland side, but I was going for the comfort food aspect of chicken & noodles, not a highly seasoned dish. I did make it in a different manner as I started with chunks of cooked (rotisserie) chicken. The only vegetable I used was carrot and I used dry parsley flakes for a garnish. (My parsley plant is currently in use as a butterfly caterpillar host plant,)

Cucumber-Tomato Sauce

I was truly surprised how good this was. Had NEVER cooked cucumber in any type of recipe and the only reason I made this was because I needed to use a cucumber and I was tired of eating it raw in salads! I did use chopped sweet onion and I sauteed it with the bell pepper, garlic & basil before adding the rest of the ingredients to simmer. I used a potato masher to make the sauce a slightly smoother consistency and served it mixed with rotini pasta.

Pasta Pomodoro

Good timing, allrecipes! I had just the right amount of roma tomatoes to make this "daily dish" recipe and I thought it was absolutely delish. Let the sauce simmer longer than the recipe states, until it's really thick and flavorful. The balsamic vinegar compliments the fresh tomato taste, it doesn't cover it up. The only changes I made to the recipe was using feta cheese instead of parmesan and using rotini instead of angel hair so that the shape of the pasta would hold more of the sauce.

Easy Chicken Curry

I was hungry for chicken curry and thought this looked like a super easy recipe, but thought that with only chicken and onions it would be a bit plain. So I added a peeled, chopped tomato and a handful of raisins.

Sour Cream, Cucumber and Dill Dip

I had never made a dip with grated cucumber, but that is a wonderful tip. I salted the grated cucumber and let it drain for a few minutes in a colander, then squeezed it dry.

Cucumber Shell Salad

Was looking for a way to use the cucumber I had been given in a different way than my usual vinegar marinated cucumbers. I used green onion, so added some red bell pepper to this salad for the extra color. The ranch dressing and the cucumber pair perfectly making this a terrific luncheon salad. Very yummy served over tomato wedges with cold rotisserie chicken on the side.

Spinach and Rice (Spanakorizo)

Very good - easy too and only one skillet to clean! I did make some modifications so that the flavors would go better with the Italian-based marinade that I used on pork loin chops. The tomato sauce was flavored with garlic-basil-oregano and instead of water I used tomato juice. A healthy amount of Italian Seasoning and parmesan cheese intensified the Italian flavor. Next time I'll plan ahead and make it following the recipe and suggestions for a Greek side dish.

Kelly's Butterscotch Pudding

I loved the flavor of the pudding, but didn't love the consistency. I only had 1% milk and I suspect that might have been the culprit. The pudding would have made a great sauce! This goes in my recipe box and I'll try it again with milk with a higher fat content.

Sweet 'N' Sour Turkey

Was looking for a recipe to use turkey leftovers - this was easy and quick and good. I used the pineapple juice in the cornstarch mixture along with water to = 1 cup and chicken granules for flavor. It was evidently not enough liquid because the sauce turned out to be very thick - so I simply added more water at the end to thin it the way I wanted it. Also used 2 tablespoons cider vinegar instead of 1 tablespoon lemon juice for a little extra sweet/sour flavor.

Jim's Macaroni Salad

A basic, tasty macaroni salad that allows lots of add-in choices based on personal preference. I added ham but not olives. Sweet relish instead of dill pickles. Found it necessary to thin the dressing slightly - used milk plus a little liquid from a jar of hot and sweet salad peppers. I followed other reviewers' suggestions to add celery salt.

Bada Bing Pork Chops

Tasty way to make a VERY tender chop! Since the applesauce I used was unsweetened, I added brown sugar. I browned the pork and then added a small amount of water to simmer until cooked through.
