Raspberry Sauce

So delicious and easy to make except for the process of straining the seeds :) Impressive and an absolutely perfect quick dessert served over frozen yogurt and garnished with a sprig of fresh mint.

Cucumber Pasta Salad

WAY too much dressing according to the recipe. I started with 1/2 cup mayo and just added small amounts of buttermilk until I thought it was the right consistency. The salad looked kind of bland with just the cucumber and onion (I didn't use celery - personal preference.) So I added two diced roma tomatoes and a lot of fresh herbs - parsley, chives, and dill. I used celery salt instead of seed and that helped give it the extra seasoning that it needed to be really good. I'd say the recipe as written is a 3, but with the additions it's a 5.

Basil Cream Chicken

This recipe was great to use the leftover cooked chicken in my freezer...I just basically simmered all of the ingredients together and served over rice for a very tasty meal. Didn't have cream so used 2% milk and thickened it with a bit of corn starch. The taste was a 5 even as I made it, but next time I want to make the recipe as written - I think the presentation would be better.

Pineapple Coleslaw

I agree with the previous reviewer that this is different than the usual coleslaw and an excellent side dish. I used bagged coleslaw mix and the only adaptations I made to the recipe were to add some chopped green onion and sour cream to the dressing. This is a great go-together with ham.

Minted Marinated Zucchini

I had some "baby" zucchini that I needed to use plus an abundance of mint in my garden, so was delighted when I saw this recipe. If I made this again I'd use canola oil to avoid the "congealed" olive oil after it had chilled for several hours, but I seriously doubt that I will make it again. It just wasn't quite the taste I hoped it would be.

Spanish Potato Omelet

I really love the combination of potatoes, onions, and egg for a quick meal. I've made and eaten this many times; my German grandmother frequently made it with leftover baked potatoes. I like to garnish this with fresh cilantro, parsley, and chives and I think it's wonderful as a "tortilla" or as a scramble.

Caribbean Chicken Salad

I prepare quite a few salads during the summer and this one will be high on my list for a salad that's very tasty, easy, quick to prepare, and a complete meal. Instead of preparing the fresh salsa, I used bottled medium chunky salsa and added the pineapple tidbits to it (along with some of the pineapple juice) and mixed it all together with chopped fresh cilantro. I didn't add the white sugar with the other dressing ingredients since other reviewers felt the dressing was too sweet. And it was just right for my taste without it.

Citrus-Basil Vinaigrette

O this is good! I chose to use canola oil instead of the olive oil because I refrigerated overnight, cider vinegar, all orange juice, omitting the lemon. No fresh basil - so dried subbed. I used white sugar instead of honey and added a bit more as I like the sweet factor. Really fabulous tossed with a salad of mixed baby lettuce & spinach, green onions, halved red grapes, and toasted almonds.

Dill Dip

I omitted the sugar (as I used Miracle Whip) and used fresh dill instead of dried. I served this with a variety of veggies at a luncheon for my co-workers and from the amount remaining, I'd say everyone liked it.

Sweet 'n' Tangy Pork Chops

I doubled the sauce so I'd have plenty to eat with the meat. The sauce was very pleasant and this is a GREAT quick recipe with few dirty dishes. I would have liked a bit more of the tangy in the sauce - maybe next time I'll add a bit of vinegar or soy sauce. This recipe works well too for boneless butterfly pork chops...

Coconut Curry Tofu

I didn't have all of the veggie ingredients for this curry and couldn't get to the grocery store, so had to sub some things - used a can of drained petite diced tomatoes instead of fresh, a can of spinach (squeezed dry) instead of the bok choy, and I just omitted the mushrooms. Definitely would recommend pressing the excess moisture out of the tofu and frying it (in butter) before adding it to the sauce so that it develops a more meat-like texture and keeps its shape in the sauce. Served with basmati rice and fresh cilantro, this was delicious!

Cindy's Southern Vegetable Delight

So glad to find this recipe because I had all those veggies and needed a way to use them! I sliced the potatoes (skin on) and sauteed the potato with the onion briefly with several whole sprigs of fresh thyme before adding the squash & tomatoes. This was great with marinated grilled "Unbelievable Chicken" from AR.

Unbelievable Chicken

I added frozen chicken and the marinade to a ziploc bag and let thaw/marinate in the refrigerator overnight. Didn't have fresh lemon/lime so used bottled juice (I know...fresh is better) and about equal proportions of the juices to vinegar. Used Boetje's stone ground mustard (this is more for my reference as it's a local product and I don't know how widely it's distributed) and vegetable oil instead of olive oil. I love sweet and sour. Tasty and easy. I pounded the meat slightly just so it would grill evenly, and used my indoor grill pan.

Creamy Dill Salad Dressing

Was looking for a way to use some of the dill that "volunteered" in my garden and was growing EVERYWHERE! I enjoyed this dressing although I used Miracle Whip and I'm sure I'd prefer mayo. Also used 2% milk with a little lemon juice added for extra zip.

Sausage Rice Pilaf

I, too, made this on the stovetop instead of the oven by cooking the rice with beef broth, browning the sausage, onions, and mushrooms and then adding everything together in the skillet. Along with the dried oregano, I used some fresh thyme and a few drops of hot pepper sauce, salt and freshly ground pepper. It was a fast to make recipe, easy, and I thought really good taste. I'm sure I'll make this again.

German Potato Salad

I make this recipe using equal proportions of the water, vinegar, and sugar - 1/2 cup each per 4 potatoes - and it tastes exactly like the German Potato Salad my mother makes (the same recipe that her German mother made). I like this hot or cold, but be sure to add the dressing to warm potatoes so the flavor is distributed evenly throughout.

Creamed Eggs on Toast

The method of mashing the yolks and adding them to the cream sauce before the chopped whites caught my eye...I liked that the sauce was a sunny yellow color instead of just a pasty white sauce. I did find that I needed to use slightly more butter for the roux, less flour, and more milk to make it the proper consistency for my preference. Crumbled bacon added flavor and made for a nicer presentation.

Mom's Shrimp Macaroni Salad

I scaled the recipe to 2 servings but used an entire can (4 oz) of tiny shrimp. Since I was using small shrimp I also stayed small with the pasta and used orzo. This salad has a really good flavor.

Famous Japanese Restaurant-Style Salad Dressing

This dressing has a lot of great flavors in it that work well together...was only making a small amount and didn't want to pull out the blender, so just used onion powder, ground ginger, and skipped the celery. Quickly mixed the rest of the ingredients with a whisk and tossed with red leaf lettuce, grated carrot, and bean sprouts.
