Black Bean Soup II

A good basic recipe but it did need much less liquid and more flavoring in my opinion. I used chipotle powder and oregano in addition to the cumin and garlic (added the spices to the saute, not to the liquid) and only 1 cup of liquid for 1 can of beans - I would use a ratio of 1 cup chicken broth: 1 can of beans next time I make this. This soup is really good served with a dollop of sour cream.

Nacho Popcorn

This brought back a childhood memory of a little shop that sold flavored popcorn where my grandmother used to take me. This popcorn tasted almost exactly like something that we would have purchased there.

Spinach and Rice Alfredo

Very good, I could have eaten a much bigger serving portion! I did do some things differently - I cooked finely diced red onion with the rice, I used 2% milk so had to simmer longer to get that nice creamy texture, I garnished with more parmesan cheese, and as it still seemed a bit lacking in flavor, I stirred in some torn fresh basil.

Broccoli Beef I

I used much more ginger, (fresh, grated), doubled the soy sauce and added green onion cut into 1" pieces. Was going to use additional veggies (red bell pepper, carrots, etc.) but decided to go with just the broccoli. Was glad I did - this was tasty.

Peach Smoothie

The idea of using the combo of peaches and orange juice sounded good; however I'm not sure I'd care for the canned peaches, and we can get really tasty fresh peaches in the grocery store now. So for 2 servings I used two fresh peaches (peeled), 1/2 cup 2% milk, 1/2 cup vanilla yogurt, 1/4 cup orange juice, 1 tsp sugar, 1 tsp vanilla, and 4 ice cubes to lighten it up. A 5-star smoothie.

Steak Salad

Delicious and filling; I thought the dressing complimented the steak excellently. I used feta cheese as suggested by other reviewers and muffaletta olive sandwich spread - also a tsp of honey in the dressing. I tossed all of the ingredients together prior to plating.

Soft Polenta with Spicy Tomato Sauce

I was desperately looking for something new to use some of the overabundance of roma tomatoes from the garden. Used about 5 peeled and whole romas (for 2 servings) and balsamic vinegar instead of sherry. A keeper recipe with or without the quinoa.

No-Tomatoes-Required Italian Seasoned Stir Fry

I even changed the recipe that I submitted! This time I made it with bacon-wrapped turkey tenderloins. I fried up the bacon separately and then browned the flour-coated turkey cubes in some of the bacon drippings. And I saved the crumbled bacon for a garnish. The flavors in this stir-fry work equally well with pork or even beef.

Zinfandel Salad Or Slaw Dressing

Always a plus to find a dressing this good and quick that I can make myself instead of buying bottled...I think I followed the recipe's proportions, but this turned out to be a little thin for my preference. Easily remedied by adding a bit more mayo. Taste was great - and I had a delicious mixed salad of romaine, radicchio, spinach, and feta cheese.

Shrimp with Mustard Sauce

What a wonderful quick dinner with a gourmet taste! Unfortunately, I only had cooked shrimp in the freezer so modified the recipe slightly to try to avoid that "rubbery" texture. I sauteed green onions with finely diced orange pepper and then added chopped, peeled Roma tomato. Let that simmer with the wine/mustard for a few minutes and then just added the shrimp at the last minute to heat through. Excellent flavor although I do agree that it needs more sauce to be served over pasta or rice. I am anxious to try this recipe again with raw shrimp.

Creamy Cabbage with Apples and Bacon

The complexity of flavors makes this a special dish. We felt the first hint of fall in the air today, so I thought this would be an appropriate supper. I'll also make this again - it would be excellent even without the sour cream added.

Orange Roughy with Citrus Sauce

Perfectly delicious! I can honestly say that this preparation is one of the best I've ever had of orange roughy. The only addition I made was to add about 1/2 tsp of white sugar to the citrus juices. The fish was fantastic served along side a simple turmeric basmati rice pilaf with dried cranberries and green onions. Soaking the fish in milk before frying took away ALL of the fishy taste.

Ground Beef Stroganoff

The flavor of this was excellent (the only additional seasoning I added was a few shakes of worcestershire sauce). But I (like other reviewers) had the experience of the end product being too greasy for my preferences-so for that reason will probably not follow this recipe again but will go back to stroganoff thickened with flour instead of the mayo ingredient.

Pico de Gallo Chicken Quesadillas

Very tasty and a quick & filling lunch. I used leftover grilled chicken (Key West Chicken) and didn't add any of the tomato pico to the quesadilla as I was using ripe-from-the-garden tomatoes and was afraid they would be too juicy and make the tortilla soggy as other reviewers noted.

Cauliflower Lettuce Salad

I didn't plan ahead so when I found this recipe, there wasn't time to layer and refrigerate overnite. I just assembled all of the salad ingredients, mixed the mayo, sugar & parmesan and then tossed together. I used green peas and the lettuce I had on hand included carrots and purple cabbage - so they added some extra "layers." This is high up on my list of favorite salads and a taste I haven't had for quite a while.

Key West Chicken

I upped the amount of lime juice, but still didn't think it was as noticeable as I would have liked. I think the key is maybe to decrease the amount of soy sauce? I'm going to try that next time and increase the amount of honey, also. I love all of the flavors in this marinade, so I hope to be able to perfect it according to my taste.

Moroccan Mashed Potatoes

Enjoyed the taste - I'm a fan of turmeric and cumin - but I like "traditional" mashed potatoes too much and so I'll probably stick with those in the future. Thanks for the taste adventure.

Roasted Balsamic Cauliflower

I really think people who don't particularly like cauliflower would like this recipe...the balsamic vinegar and the caramelization from roasting add a nice sweetness. Allow about an hour to marinate for maximum flavor and don't skip the step of lining your baking sheet with foil!

Ultimate Baked Beans

These were really wonderful - I even received a compliment from someone who said they were the best beans he ever ate. Even though I used a different combination of beans (pork & beans, great northern beans, black beans), finely diced red bell pepper, and omitted the bacon, I followed the seasoning proportions with the exception of using a combination of ketchup, honey- chipotle barbeque sauce, and molasses instead of only ketchup.
