Sweet, Sticky and Spicy Chicken

This is a great tasting, very easy dish! I only gave it four stars since it wasn't as sticky as I expected, but tasted perfect nonetheless! I adjusted the recipe by doubling the honey, then doubling the sauce and it was just the right amount. I also sautéed some peppers and onions...thought pineapples would have been a wonderful addition for next time. I served this with jasmine rice and steamed broccoli. Will DEFINITELY make again :) Thank you!

Braised Collard Greens

I usually just make greens with hamhocks or neckbones with salt and pepper and they are so good made the basic way! However, these were delicious! I am torn as to which way I like better! I did save the 'pot liquor' and use it again, but the flavor wasn't as good . Wonderful recipe! Thank you :)

Crab Crusted Grouper

This was soooo tasty! My family all loved it right down to my 6 and 1 yr old. I didn't have grouper on hand so I used Tilapia. I used sweet peppers instead of bell, and parmesan cheese instead of the bread crumbs. I didn't measure anything; just threw it all together and popped it in oven. SO EASY! (I probably used more parmesan than called for and that made it even tastier...). Delicious!

Broiled Tilapia Parmesan

Wow. This has become my go to fish recipe. So simple to prepare...you don't even need to measure really...just guesstimate and your good! I used Fage Total greek yogurt instead of mayo(I substitute that for just about everything calling for sour cream or mayo unless it is a cake recipe...good stuff!!). Also, I did not have celery salt so just used ground celery seed and that was great! I probably used a little bit more parmesan than called for and it was scrumptious! Family raved over it! Served with jasmine rice and grilled veggies with biscuits. Perfecto!

One Bowl Chocolate Cake III

Great simple choc. cake. I am known for my elaborate baking endeavors, which are usually delectable...but I had to make a birthday cake and was in a major hurry the day before so I used this cake recipe, the chocolate ganache recipe from this site, and spread seedless raspberry jam in between loaves for a raspberry chocolate ganache cake. I was skeptical venturing out into the unknown for someone's birthday, but I got RAVE reviews!!! Next time I will make more ganache as there was not enough for this cake, but the cake itself was very simple to prepare and quite tasty. Not too rich either, as it uses cocoa instead of chocolate. Good choc. cake recipe when time is short! I rated 4 stars as I did not make with frosting as directed.

Chicken Fried Chicken

This is a crispy fried chicken and very tasty! I don't eat fried anything very often so have this with homemade mashed potatoes and corn once in a while. It is the same as Country Fried Steak, but with chicken instead...a little messy to make, but very tasty.

Brazilian White Rice

This was a good white rice. I make this with chicken broth or with water and salt. Good either way. Nothing exceptional as it is just rice :P but a nice addition to any meal instead of plain rice. I still prefer jasmine rice.

Apple Crisp II

This was delicious! I doubled the topping the first time, but that was too much. The second time I used the topping plus doubled it just by half. Perfect. I also decreased the sugar to 3/4 cup and used brown sugar for 1/2c and white for 1/4...I prob will just use 1/2 next time. The only other change I made was to add 1/4tsp nutmet. Perfecto!

Anniversary Chicken I

This was very tasty! What I liked most about it was how easy and quick it was. My 1 and 7 yr old both loved it. My 7r old woke up and wanted more for breakfast! I mixed the teriyake (I used baste and glaze) and the ranch together before pouring on chicken and had no issue with any funny color. I also lightly seasoned the chicken with red pepper tabasco Lawrey season salt for a little kick. Served with garlic mash pot and steamed broccoli and the whole meal was done in 30 from start to finish! Love that!

Picadillo

I love picadillo because it is so versatile! This is a good picadillo, but I prefer Cuban style with golden raisins and no cinnamon. However, the cinnamon was a tasty variance. I serve picadillo many ways...over white rice, with potatoe (baked, hashed browns, roasted or mashed) and a dollop of sour cream or greek yogurt on side, sometimes with my eggs, sometimes i add black beans and make burritos or tacos with it, sometimes I use it as a filling for empanadas...my personal favorite but time consuming is to make rellanos de papas (fried potato balls) with it...yummmmm...i could go on and on with the different ways to use this stuff! I love it and it always is used up FAST by the family!

Buttermilk Pancakes II

These pancakes were PERFECT! Fluffy, with just the right amount of salt...I didn't even need butter, just syrup! I scaled it down to 4 servings and that made 7 good sized pancakes...I was going to beat egg white seperately to soft peaks, and then add it at the end for extra fluff, but i decided not to, and turns out these pancakes didn't need the extra help =) I added a little vanilla (1 tsp) and a few shakes of cinnamon along with some blueberries (lightly coated in flour so they don't sink to the bottom =) for the second batch and those were fantastic as well. This will definately be my go to pancake recipe!

This was delish!!! I didn't stuff the chicken, but just kept spinach as side dish and served it with mash pot. My kids LOVED it! I loved it also and it was easy to prepare =)

Zesty Slow Cooker Chicken Barbecue

This was incredibly EASY and DELICIOUS! I cooked in some chicken broth and some of the italian dressing and bbq sauce...added the rest after I shredded the chicken. Toasted hoagie rolls with garlic butter and everybody tore it up. Going to make on bak pot with chipotle cheddar tonight. yum!! Def make again!!

Slow Cooker Buffalo Chicken Sandwiches

Another easy and delicious slow cooker winner! We had it on hoagie rolls (yum) then made a pizza with it...DOUBLE YUM...and then on a salad and also in a wrap. It was all very good. My 9yr old loved it =)

Glazed Chicken Wings

My 9yr old son who begs for xaxby's teryaki wings all the time worshipped these lol. I didn't measure, just eyeballed everything. They were easy and delicious! Glazed them repeatedly and they were excellent and sticky =). UPDATE. Everytime I make this I get raves. I never measure just eyeball, but my son prefers them when I use the JackDaniels brownsugar bbq sauce. I bake them at 400 for 45 min or so on one side, then 40 min or so on other side (i periodically peek in on them). Once the chicken is done and skin starts to thin and tighten I start glazing every 10 min or so. I finish it up on broil, stopping to glaze as often as possible. (I stand there and watch it these last 15 min). They are BANGIN!!! =)

Slow Cooker Adobo Chicken

Grandmother's Buttermilk Cornbread

This was PERFECT! I made it as is and loved it. Also made it the 'southern' way for my bf and he raved about it. I simply increased the cornmeal to 1 1/4 cup cornmeal or so (I eyeballed it) and cut the flour back accordingly so that both came out to 2 cups. I also decreased the sugar to 1/3 cup which was perfect for him =) This was sooooo moist and had a perfect crumb. Yum!!
