Sam's Famous Carrot Cake

This carrot cake is PERFECT by the 3rd day. This recipe is perfect cuz it doesn't have too much cinnamon. I love cinnamon but I don't want my carrot cake to taste like a spice cake so this is perfect for me. The first day I decided I didn't like the raisins (which I had simmered in O.J. prior to adding) but the 3rd day I LOVED them in! I made a 13x9 and 45 min was perfect...I let mine cook for 50 and that extra 5 min dried the outer corners of the cake a bit.

Awesome Slow Cooker Pot Roast

Wonderful Tried and true recipe for me! I find that the tri-trip cut is best, but bottom round works too. The gravy is superb with a few glugs of red wine!! I like mine heavy on the onion flavor so always throw in onion quarters in the gravy as well, sometimes some garlic and rosemary but it's delicious without also. I made my beef broth a little more concentrated (I use maggie cubes and water) and about 2 hours before it was done I shredded my meat and this made the meat soak up the gravy wonderfully. The remaining gravy was just right! I make roasted carrots and onions also along with homemade mashed potatoes and corn on the cob. SUCH COMFORT FOOD!!!

Downeast Maine Pumpkin Bread

PERFECT. I added allspice and ginger, but it would have been perfectly delicious with the recipe as is. I made a loaf and a dozen muffins. Muffins were done in 25 min. I poked holes in bread when done and poured some melted sugar cinn butter on it, but this was not necessary. It is wonderful plain.

Award Winning Soft Chocolate Chip Cookies

These were superb and very SOFT cookies. It was hard to tell when they were done but it was about 10-11 min for me when the edges turned golden brown (they still felt very 'undone' but once they cooled they were perfect). I cut the recipe in half and that was perfect for me and my 2 small kids. I also upped the vanilla to 1Tb and added 1tsp bak powder and 1/4tsp salt (again for half the recipe). I was so glad I increased the vanilla. The taste was perfect! Next time I cut back a little bit on the choc chips and increase a tad on the walnuts, not by much tho. I will definitely make these again! =)

Lemon Garlic Tilapia

Easy and Delicious! I used more butter than lemon or it's too lemony (3T butter, 2T lemon) and 4 cloves of sauteed garlic. Seasoned with S&P and parsley (fresh is better) and cooked at 400 for 12 minutes (the filets were on the thicker side. Served with steamed broccoli and rice.

Gourmet Sweet Potato Classic

I get raves over this EVERY time and always have mulitple recipe requests. Everyone always says it the Best they have ever tasted. I don't even think about making sweet pot. souflee any other way anymore =). I make as is except i double the pecans. Oh, and about 1/4 cup white sugar and 1 cup brown sugar...but it would still get exclamations just as written =)

Baked Beer Can Chicken

This was so good! Used heineken, didn't have green onions, rubbed most of seasoning on outside and 2-3 Tbs got poured into the can of beer. Next time may rub seasonings under skin to avoid the spices burning but don't know if its worth the trouble. *Put a bay leaf in the can of beer also. *Poured OJ into the bottom of pan with the beer. Didn't have a second can of beer so just basted every 15 min or so with the pan drippings. Took about 2 hours for a 4.5 lb chicken. Will definately be making this many more times!!! YUMMM

Grandmother's Buttermilk Cornbread

This was PERFECT! I made it as is and loved it. Also made it the 'southern' way for my bf and he raved about it. I simply increased the cornmeal to 1 1/4 cup cornmeal or so (I eyeballed it) and cut the flour back accordingly so that both came out to 2 cups. I also decreased the sugar to 1/3 cup which was perfect for him =) This was sooooo moist and had a perfect crumb. Yum!!

Glazed Chicken Wings

My 9yr old son who begs for xaxby's teryaki wings all the time worshipped these lol. I didn't measure, just eyeballed everything. They were easy and delicious! Glazed them repeatedly and they were excellent and sticky =). UPDATE. Everytime I make this I get raves. I never measure just eyeball, but my son prefers them when I use the JackDaniels brownsugar bbq sauce. I bake them at 400 for 45 min or so on one side, then 40 min or so on other side (i periodically peek in on them). Once the chicken is done and skin starts to thin and tighten I start glazing every 10 min or so. I finish it up on broil, stopping to glaze as often as possible. (I stand there and watch it these last 15 min). They are BANGIN!!! =)

Slow Cooker Buffalo Chicken Sandwiches

Another easy and delicious slow cooker winner! We had it on hoagie rolls (yum) then made a pizza with it...DOUBLE YUM...and then on a salad and also in a wrap. It was all very good. My 9yr old loved it =)

Zesty Slow Cooker Chicken Barbecue

This was incredibly EASY and DELICIOUS! I cooked in some chicken broth and some of the italian dressing and bbq sauce...added the rest after I shredded the chicken. Toasted hoagie rolls with garlic butter and everybody tore it up. Going to make on bak pot with chipotle cheddar tonight. yum!! Def make again!!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

This was delish!!! I didn't stuff the chicken, but just kept spinach as side dish and served it with mash pot. My kids LOVED it! I loved it also and it was easy to prepare =)

Buttermilk Pancakes II

These pancakes were PERFECT! Fluffy, with just the right amount of salt...I didn't even need butter, just syrup! I scaled it down to 4 servings and that made 7 good sized pancakes...I was going to beat egg white seperately to soft peaks, and then add it at the end for extra fluff, but i decided not to, and turns out these pancakes didn't need the extra help =) I added a little vanilla (1 tsp) and a few shakes of cinnamon along with some blueberries (lightly coated in flour so they don't sink to the bottom =) for the second batch and those were fantastic as well. This will definately be my go to pancake recipe!
