These pancakes were PERFECT! Fluffy, with just the right amount of salt...I didn't even need butter, just syrup! I scaled it down to 4 servings and that made 7 good sized pancakes...I was going to beat egg white seperately to soft peaks, and then add it at the end for extra fluff, but i decided not to, and turns out these pancakes didn't need the extra help =) I added a little vanilla (1 tsp) and a few shakes of cinnamon along with some blueberries (lightly coated in flour so they don't sink to the bottom =) for the second batch and those were fantastic as well. This will definately be my go to pancake recipe!
