Simple Whole Roasted Chicken

This chicken was incredibly simple and equally delicious!!! Whole family loved it. I doubled all the spices me rubbed under and over skin as well as in the cavity. Marinated for 24 hours. Served with sweet potatoes and asparagus. SO GOOD! Will definitely make again! ????

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

This is delicious but I up it a bit by using Black Magic Cake recipe which is almost identical to this except uses buttermilk and coffee instead of milk and hot water. It also uses one less tsp of vanilla. Either one is delish but I will prob stick with that one as my go to.

Black Magic Cake

Crazy WICKED good. Exact same recipe as Hershey's Perfectly Chocolate Cake but with buttermilk instead of milk, coffee instead of hot water, and 1 tsp less of vanilla. Either way is good but this is TOPS. Very chocolatey. I couldn't stand it if it had any more chocolate! It got better and more moist each day. Perfect. I used the recipe that goes with the Hersheys cake. My kids went bonkers over it. =) I said it was too much chocolate the first day...but kept going back...by the 3rd day I concluded this was my new addiction and I don't even like chocolate like that.

Brown Rice and Black Bean Casserole

This was easy and pretty tasty! I made my own black beans so used about 2 cups of that. I cooked 1 cup of dry jasmine rice (out of brown rice) so whatever they amounted up to I threw that in there. Due to being in a hurry and tired I totally bombed the instructions lol but it turned out. Used about a cup of shredded carrots and follows instructions for other veggies. Couldn't even taste the mushrooms, which is great for the kids sake. I could've thrown another chx breast in there but it was good as is. Poured a splash of veg broth over dish before sprinkling cheese on top. Used a 13x9 pan and it was as perfect. Think ill make less next time though. Used cheddar and Monterey cheeses. Turned out excellent! Maybe will try an extra zucchini next time. I would make this again. Will update when kids tell me what they think. Gotta try it again as a vegan meal with brown rice and no chx.

Chocolate Italian Cream Cake

I got this recipe from my Southern Living magazine and this is the same. IT IS SO GOOD!!!! I mean, it is addictive. I like it as is because I really enjoy the light airy chocolate flavor so I don't change a thing. Everyone raved over it. It was gone in 24 hours. I will DEFINATELY be making this again!

Chicken Fettuccini Alfredo

Soooo GOOD!! and very easy. I made half the recipe, omitted the mushrooms because my kids would've cringed, and added steamed broccoli. I sub Fage Greek yogurt for sour cream because I do that in every dish except cakes, even tho that would probably be just as good. Fage (2% or whole, the o% is too yogurty sour tasting) is the only brand I do that with because it's so rich and creamy. Otherwise made exactly to the T. It was sooooo delicious and best of all a hit with the kids. Because of the extra broccoli it could have used a bit more sauce but it was still just fine. Will make again and again. Oh, because I have a garlic chive plant, I also chopped some up and threw them on top of the finished dish. =)

Best Ever Banana Bread

This was great! I used applesause in place of the fat and added a tsp of cinnamon and dash of vanilla. It was really good! I think that next time I would add half the cinnamon. =)

This was a great banana bread! I've tried many great recipes and this will be added to that collection and be one of the staples at that! I used 1 cup of MASHED bananas, didn't melt the butter, and used buttermilk in place of the sour cream b/c that's what I had. DELICIOUS!

Italian Sausage Soup with Tortellini

Fantastic!! Even my 12 and 7 year old loved it. I made no changes except I just used 6 cups broth and no water. Used 1 med zucchini and 2 carrots (I think I could added 1 more of each, plus some spinach at the end), only added the tortellini I was using that night, and served with toasted garlic bread. Can't wait to eat it the 2nd day! Will make again!

Ginger Glazed Mahi Mahi

This is easy and DELICIOUS! Both kids ate seconds. Followed directions easily from just a quick glance. Served w/brown rice, sauteed spinach and steamed brussel sprouts. Cleaned my plate.

Red Velvet Cake

This recipe is great. I make it exactly as written and it wows people every time. Some tips: Start checking cake at 20 minutes and take out of oven when toothpick comes out ALMOST clean. When it comes out clean it's already a tad too dry. Let your eggs and buttermilk reach room temp before starting. Once you mix you baking soda and vinegar move fast but still gently. I made with this frosting and w/cream cheese and liked it both ways. I prefer cream cheese though =)

Actually Delicious Turkey Burgers

My 11 yr old son loved these and didn't even realize they weren't beef. But 6yr old took one bite and wrinkled her face up. I liked them a lot and will make again. I did follow the tips from AUSSIEMUM1 minus the red pepper. =)

Fried Cabbage II

I didn't add vinegar only because I forgot, but I'm sure it would be good because I usually add pepper vinegar to my cabbage. Made recipe as is otherwise but didn't measure anything. My 11 yr old son gobbled it up with some cornbread and macNcheese. Comfort food

Spanish Rice Original

This was the BIZNESS!!! Admittedly I didn't follow to the T, but close enough. Rather than tom sauce and fresh tomatoe, I used 1 can of cut up whole tomates along w/the juice from that can. I also ended up using all the juice from the other can. I would've used 2 cans of tom, but idk if my kids would have liked all those tom. I was cooking chicken for chicken tacos so just added some of that to the tom juice for the liquid. Again, due to my kids, I only used 1 onion and 1 green pepper. I can't imagine 2 onions, 1 of both was sufficient. I also didn't use corn or olives. Served this with refried beans and chicken tacos. DELICIOUS! Next time, however, I wouldn't use all the bacon grease, I would half it. Will make this again and again.

Pablito's Chicken Tacos

(partial review for now) LOVED THIS!!! Will make again often!!! And, let me add, I will never ever buy store bought tortillas again. These were sooooo good and very easy to make. I made them ahead of time and as they were coming out of the pan me and the kids drizzled a few with honey, cinnamon and sugar and scarfed those bad boys down. TASTY. I used near boiling hot water and made them right away as I was in a hurry. They turned out just fine. For the white sauce I sub'd Fage brand greek yogurt 2% because I sub that for sour cream in almost everything. I also added lime zest to it. White sauce was delectable on everything, even the refried beans and 'Spanish Rice Original' (another bomb recipe from this site). Because...I make everything more complicated than need be lol, I used the chicken recipe from Goya on this site 'Shredded Chicken tacos' and it was great. I plan to use this chicken next time because I love kale. No sensible reason why I didn't use it this time. I used Maseca for the tortillas. Will update when I make the chicken =)

Incredibly easy. I made as directed and it was perfect. My 11year old son loved it as did my company. Very versatile. Will definately make this again. Of course, I didn't use all goya products but I keep their adobo on hand at all times! =)

Banana Crumb Muffins

Delicioso! This is my son's favorite muffin and he raved raved and raved. I myself coudn't stop eating them. Completley addictive. I did however add a tad of vanilla and shake or so of cinnamon.
