Thanksgiving Beets

This was a very easy recipe and my family loved it. I used fresh beets. I boiled them until fork tender then plunged them into ice water to peel them. I used my egg slicer to cut them the perfect size. Then followed the recipe. I made them in the morning and just reheated them for supper. Yummy! I am now a beet fan!

Incredible Punch

Served this for a bridal shower and EVERYONE raved about it. It was so easy and I served it in a drink dispenser b/c the party was outside on a very hot evening. It was great! I made NO changes.

Chicken Cordon Bleu II

I made this twice in one week! Once for my family who loved it and once for friends who thought I was an amazing cook! The hardest part was pounding out the chicken flat! A one pot dish and no oven heating up the house! I did put more flour and paprika in the bowl than it called for and the egg brush would be a good idea!

Cousin Cosmo's Greek Chicken

So easy and tasty. My husband said I should have a day off work more often but this was one of the fastest recipes to fix. I used chicken tenders and flattened them instead of breast folded in half and they cooked fast and tender. I WILL make this one again.

Fresh Broccoli Salad

Sometimes I use sunflower seeds or scallions or craisins or dried cherries. This is a summer staple for us. Only use mayo not salad dressing/miracle whip.

Chicken Pot Pie IX

This was a fantastic recipe as it is. BUT I went gluten free and made this with gluten free pie crust and corn starch instead of flour and it was also fantastic!

Chicken Potpie

I wanted a chicken pot pie that was easy but didn't use cream soups in it. This is such a great recipe. I've made some changes at times but mostly just follow the recipe as written. For instance, I've used puff pastry or phyllo dough for the crust. I won't use the phyllo dough again but we love the puff pastry. With potatoes and corn I feel that there are enough starch veggies in it so I will use green beens, french beans, cooked broccoli, or frozen mixed veggies in different configurations. I have served this for many special occasions for guests and they think I slave over the dish. Haha! so easy and sometimes I'm serving the frozen one and they never know! I have also used leftover turkey or beef and then used beef broth instead of chicken. Also great to bring to people who need a meal.
