Fast and Delicious Black Bean Soup

This recipe has become a regular part of our family dining. My husband and kids all request this. Like others have suggested, I prefer an extra can of black beans, and use a large onion and bell pepper. Rather than blend the black beans before adding them to the soup, I wait until the soup has cooked, then use a hand emulsion blender to blend some of it right in the cookware. As an added benefit - my son doesn't like carrots and my daughter doesen't like green peppper...but when it's blended into the soup and the can't see it...they love it! :-) I also like to make this with cornbread, and we have begun crumbling the cornbread right into the soup. Yum!!

White Bean Bruschetta

We all loved it - parents and kids alike! I followed the recipe pretty close to exactly. The only changes I made were to use less olive oil in the tomato-bean mixture. Also, instead of brushing the bread slices with olive oil, I have olive oil cooking spray that I quickly sprayed over the bread before broiling. I placed my bread on the second shelf down on the oven because it burns quickly under the broiler. The fresh basil gave it a very fresh taste! I expect I will be making this one again. Thanks!

Seven Layer Dip II

Thanks to the last reviewer for the great suggestions. I followed the recipe pretty closely. The only changes I made involved using ready-made guacamole, using extra sour cream and less of the taco seasoning. (I find packaged seasonings too salty - personal preference.) I added about a half cup extra low fat sour cream. But then again, I can't imagine ever complaining that a recipe uses too much sour cream! I used previous suggestions and added chopped hot pickled jalapenos on top. Everyone gave it a big thumbs-up!

Baked Sweet Potato Sticks

I thoroughly enjoyed these sweet potato sticks! I followed the recipe except for scaling it back for two potatoes and adding a bit of garlic powder. I will definitely make this one again and experiment further. The only change I would recommend, based on the previous reviewers' suggestions, is to expect to use multiple cookie sheets. I cut my potatoes into a steak fry size, and the cookie sheets could only reasonably hold about 1 1/2 potatoes. Great recipe for sweet potato lovers!

Ranch Dipping Sauce

I liked that the recipe used yogurt to help cut fat and calories. The sauce was quite creamy. I made this as a veggie dip for a group of about a dozen people. I agree with the reviewer who found the recipe too salty. I had bought a small container of yogurt and didn't have leftovers with which to dilute the salty ranch packet. If you like salty foods, this recipe is more likely to suit your preferences. If you are not fond of salt, buy enough yogurt to dilute the seasoning packet.

Luscious Lima Bean Soup

Wow! So inexpensive to make and so very tasty. I followed the recipe as written except for using onion instead of leeks and shallots, boxed chicken stock instead of the cubes, and I added two carrots. I served cornbread with it. Even my picky six year old finished his bowl of soup. I will definitely make this one again and again. Thank you for contributing this recipe!

Corn Potato Pancakes

The first time I made these was after a cooking mishap. I made the worst batch of mashed potatoes ever - they were runny, and the big bowl of potatoes went virtually untouched. I used the ample leftovers using this recipe (adding extra cornstarch and regular instead of cream style corn to compensate for the runniness). No one could get enough of them! My husband now requests these regularly. Thank you for contributing this recipe!!!
