Turkey and Quinoa Meatloaf
I can't believe I made a beefless meatloaf that I like! This was really good. I read the reviews and made a ton of changes. First of all I used 1 lb of chopped chicken breast meat and boiled my quinoa in chicken broth instead of water. I added about 1/4 c italian seasoned panko bread crumbs. I used a couple dashes of hot sauce, not a whole tbsp and it didn't even need that. The pepper gives this enough of a kick (for my taste anyway). I also used plain tomato sauce instead of tomato paste. Last I added about 1 tbsp of the tomato sauce to the worcestershire/brown sugar topping and omitted the water. I formed the mix into 2 loaves since everyone in my house loves the ends and baked for 35 minutes. It was perfect.

Roasted Brussels Sprouts
This recipe was ridiculously good. I made a few changes since my husband hates brussel sprouts I didn't think he'd eat them as is. I halved the brussel sprouts, added some chopped red onion, one clove of garlic and about 3 slices of thin sliced pancetta. My husband still didn't eat it but that's fine since it means more for me. I loved it!

Mouse's Macaroni and Cheese
This was delicious but I did make the following adjustments: I used 2 cups of medium shell pasta, added some chopped broccoli and chopped ham and used whatever cheese I had in the fridge which was yellow cheddar, white cheddar, and monterey. I added onion powder, garlic powder and paprika to the seasoning in the milk mixture. Then I baked it for 20 minutes and took the cover off and broiled for another 5 minutes on 400 because my husband and I love the crunchy bread topping. I used a 2.5 qt casserole dish since I increased the amout of pasta. This one is a keeper.
