Italian Sausage Soup with Tortellini
Big thumbs up! Every member of the family loved this - even the kids went back for seconds. It had a great flavor, not too salty (though it could end up that way with full-sodium broth or with added salt), reasonably healthy, and very filling.
I made a few changes due to the lack of fresh produce in the stores. I used dried basil, canned whole tomatoes (I used their juice in place of the tomato sauce), frozen spinach (in place of zucchini), and julienne carrots from a bag. I also used plain pasta instead of tortellini since we have a couple lactose intolerant members of the family, and mild instead of sweet sausage. Despite these changes, I think the basic recipe and the resulting flavor was the same, and I will keep the changes I made next time I make it. The kids are already asking me to make it again!
