Baked Salmon Steak
This was delicious. I used garlic and onion powder, cut the salt and mixed the spices with the oil as well as the chopped chives and fresh thyme. I coated the tops of the salmon with it and grated the Parmesan on top. I didn't put the spinach in with the cheese and instead served the salmon on it. My salmon pieces were tall and skinny and the spinach just wouldn't have sat right on top as well as everything else. The toppings created an amazing crust on top of the salmon and I got rave reviews. Really quick and easy.

Classic Macaroni and Cheese
I've never made macaroni and cheese before with evaporated milk, and I was surprised at how good this was! The only changes I made were that I melted the butter and mixed it with the pasta, and I crumbled the cheese and mixed it in instead of slicing it. Before I baked it, I covered the top of the casserole dish with a mixture of bread crumbs and grated cheese, and it made a really nice crunchy golden brown crust at the top. The evaporated milk gave it such a good, creamy taste, and my daughter, who can be really picky, loved it. I baked it at 375 for 45 minutes until it was no longer liquid inside.

Mushroom Lentil Barley Stew
I made this because I had friends coming over after work and would have no time to prepare something. Plus, one of my friends is a vegetarian making the "what do I make??" decision even harder. I really liked this! I actually really dislike button mushrooms, so I upped the quantity of shiitake mushrooms and also added a mix of portobello and oyster mushrooms along with the shiitake. I didn't have savory, so I used thyme. And I used a diced onion instead of onion flakes. I added a can of spinach (I felt like Popeye - I didn't even know they actually had cans of spinach!) which was good for colour and flavour as well. The recipe makes a lot, and I've been happily eating leftovers for several days now. I don't usually eat vegetarian food but who knew it could be so good? ;) Thanks for the recipe!
