These cookies tasted fantastic and healthy, but like everyone else, I had to add about 1 1/2 cups of liquid just to bring the dough to the proper consistency. I used 1/2 cup each of applesauce, egg beaters, and skim milk. I also used dried pineapple instead of dates and added 1/2 cup of chocolate chips and 1 tsp almond extract...yummm! I eat these every day before my workout to give me some energy to burn! They're also great for breakfast when I'm in a hurry. Thanks so much for the recipe!!

Rich and Delicious Banana Bread

This is a good egg-free banana bread, but I made some changes. I added 1tsp cinnamon and 1/2 tsp nutmeg for extra flavor. I also put in an additional 1/2 cup of milk (after reading the reviews), which turned out a VERY moist bread. I think 1/4 cup would have been plenty, or maybe even none at all. I think the moisture in the recipe is fine as it is. Overall, the bread had an excellent banana flavor and was enjoyed by many :)

Eggplant and Zucchini Casserole

This casserole was fantastic. My family loved it and before the first one was even gone, they asked me to make another! I agree with other reviewers about the bread stuffing mix though. I didn't even use half, and next time I make this I will probably use even less. I also needed to use my wok for the vegetables (there's a LOT of them), and I added some fresh basil for a little extra flavor. Thank you for the recipe!

Strawberry Cheesecake

This is delicious and very rich. I made it for a friend's birthday and she (and her family!) loved it. I added about a teaspoon of lemon juice and a couple tablespoons of water to the strawberry sauce. The lemon really enhanced the flavor! Will make again whenever I get the chance!

Coconut-Cream Cheese Frosting

I tried this recipe before anyone else reviewed it, and I'm glad I took the risk! This frosting was absolutely delicious! The coconut flavor was not overwhelming, but it was definitely there. I used it to frost a guava-pineapple cake, and it didn't take away from the fruity flavors. I also tasted the frosting at every step of the recipe. Without the coconut or vanilla, it makes a great cream cheese base frosting, and with vanilla alone it's a very tasty vanilla frosting. The consistency is also great (I ended up adding about double the amount of cream) and it is just like store-bought frosting...but better! My family and neighbors loved it. I will definitely be using this recipe, or at least part of it, again! Thank you!

Tofu Chocolate Pudding

I'm guessing that the people who said the tofu taste was too strong didn't use the silken kind. That's the most important part to making it taste good, though easy to overlook if you are not familiar with tofu. If you use the regular kind, like you would use for grilling, the texture and flavor will not be very good at all. I used a soft silken tofu, like some other reviewers. I also used chocolate soy milk and only 1/2 cup of chocolate chips. Delicious! It definitely has a distinct flavor that you would not find in regular dairy pudding, but it isn't a bad flavor at all. Definitely worth trying.
