Hudson's Baked Tilapia with Dill Sauce

Reviewed: Dec. 17, 2012
I loved the tilapia and the sauce equally! I did however add a significant amount more of the cajun seasoning. I basically covered all 4 tilapia pieces in cajun seasoning and pan fried it instead of putting in the oven. I cooked it for about 4 minutes on each side and it came out nice and crispy on the edges but not overcooked. I also added more lemon and garlic to the sauce which tasted even better the next day. I baked some broccoli with garlic powder, salt and pepper flakes and cooked some rice and had a delicious meal! Thank you for sharing this recipe!

Curried Coconut Chicken

Reviewed: Feb. 24, 2010
Loved this! Absolutely delicious!! I didn't make too many modifications, this recipe is excellent, I just reduced the amount of coconut cream and tomota sauce since so many complained it was too watery and I tripled the garlic...I'm a garlic lover! This recipe was superb, and I'm a picky eater that loves alot of flavor and depth in my food.

Three Cheese Garlic Scalloped Potatoes

Reviewed: Jul. 27, 2009
Best scalloped potatoes I've ever had! Delish!! Like others, I boiled the potatoes for a few minutes before slicing them. Also, used 1 cup of sour cream and 1 cup of milk instead of using the heavy cream and added more garlic (minced)

Very Tasty!!! Made it with beef instead of chicken, very delicious. Used 6 garlic cloves and grinded it in the grinder with the ginger root. Very delicious!

Easy Tuna Casserole

Reviewed: Oct. 28, 2008
This recipe would have been very bland had I not made all modifications I made such as adding onions, peas, salt/pepper, pepper flakes, garlic and different cheeses.

Baked Salmon II

This was excellent! I like many others reduced the oil and added more garlic (I love garlic), it was soo good. I ate it over a bed of white rice and a nice side mediteranean salad.

It was sooooo good! I'm not a salad person, but this recipe was great! Only thing I changed like many others was doubled the dressing. Thanks for this!

Chickpea Curry

Reviewed: Oct. 8, 2007
Soooo delicious!!! I'm not sure what some of the reviewers are talking about when they say this has no flavor. I made a few adjustments. I added 1/2 cup of coconut milk, and I added 2 medium sized potatoes and it was excellent. I didn't have coriander salt, but the recipe still came out very delicious. Also, I added a little of bit of brown sugar because the cayenne pepper was a bit overwhelming. Next time I would cut back to about 1/2 teaspoon of cayenne pepper, I love spicy food, but this was just too much, but the brown sugar helped tone it down. Thanks for the recipe!
