Dave's Low Country Boil

PLEASE PAY ATTENTION TO OTHER REVIEWS! This was simply fab-with a few additions- I used beer and water for the boil. I added fresh minced garlic, an onion & squeezed 1/2 a lemon near the end and tossed the rest of the leftover whole lemon in and let it boil for a few minutes. OH MY WORD!!!!!!! AMAZING! I also tossed in broccoli and carrots. Each item in the dish had a distinct flavor. I actually used the 30% lower sodium Old Bay seasoning. YUMMY!!!!!!!!

Savory Tater Tot Casserole

Kick everything up a notch!!!!!!!!!!!! I originally got this recipe from the Duggars website. I knew when I looked at it, it needed seasoning etc. I added a layer of cheese on top of the broccoli( I decided not to use multiple veggies as it would get soggy). I also added shredded carrots and a dash of crumbled bacon that I had from the morning. After the layer of cheese I then added the tator tots. I used 3/4 of evaporated milk as well as cream of mushroom/cream of chicken soup. The next time I will use 2 cans of cream of mushroom soup- just a preference. I sauteed onions w/ garlic, onion powder and some seasoning salt. You can look at this recipe and know it needs some flavor and I am glad I kicked it up a notch.

Pork Fried Rice

With a few twists, it tastes a little more authentic. I added the following.... 1. Sesame Oil- THIS IS A MUST!!!!!! 2. Fresh Garlic 3. a dash of sugar on the pork 4. White Pepper 5. a dash of salt 5. a tad more ginger :-) This is a keeper!!!!!!!!!!!!!!!!!!!!!!!!

I thought it was ok. I followed the recipe exactly. I think I was looking for more of a Bang! My husband liked it, but not as much as egg rolls or spring rolls that I make.

Tex Mex Black Bean Dip

Yummy and my husband loved it as well. He says it on his top list of dips, just about as good as the good ole' 7 layer dip. My only suggestion to all is to use spices to your tasting and not necessarily follow just what is listed here. I sauted onions, garlix etc., but I also added onion powder, garlic powder etc. I like my stuff more flavorful and this just needs a small boost more of taste. I used organic black beans and it was wonderful. I would Highly reccommend having a side of sour cream. Get your tortilla chip, swooooooop up the black bean dip and then add a dollop of sour cream :-) ha ha- but yum yum ya mon- jamiacan style.
