Meatloaf with Fried Onions and Ranch Seasoning

Reviewed: Apr. 19, 2007
Great meatloaf recipe. I followed others advice and saved some fried onions for the top mixed with some cheese for the last 15 minutes of cooking. I used some cheddar fried onions that I had on hand. I'll definitely use again.

Shrimp Scampi Bake

Simply divine! I think next time I will half the butter and use chicken stock. I'm sure it won't taste as good but it might be a little better for us. Thanks for the yummy recipe!

Banana Oat Muffins

Reviewed: Apr. 5, 2007
Good and easy! I sprinkled them with cinnamon sugar before baking. I think next time I will use quick oats instead of rolled oats (a little too chewy). But all in all, a great recipe.

I made a few modifications: I used 2 cups 1/2 & 1/2 and 2 cups skim milk, used cauliflower instead of broccoli and only used 6-8oz of velveeta. SUPERB!

Banana Pumpkin Bread

Awesome & easy! I would have never put pumpkin & banana together but what a taste sensation. I used 1/2 cup brown sugar instead of the honey. I also baked it using a mini-loaf pan (8 loafs). Thanks for the great recipe!

Yummy! I only used 5 egss per other suggestions. Mine seemed to take forever to cook. Not sure why but it was worth the wait.

I had to add a can of tomato sauce. I will either try black beans next time or leave the beans out. Pretty good though.

YUMMY! I substituted chicken broth for the vegetable broth and it was still awesome. Not quite as heavy as regular lasagna.
