Meatball Nirvana

Grilled Fish Tacos with Chipotle-Lime Dressing

I love fish tacos and so glad I found this recipe! The marinade smells so good and the sauce is out of this world! The sauce has a nice kick too. Ive made this recipe many times and I make it exactly as written except I leave the tilapia whole in the marinade and grill it whole. I live in an apartment so I grill the fish on a George Forman grill and it turns out great!

Baked Corn I

The only change I made was using 1/2 cup of butter. Turned out really good, a bit too moist, not sure why, but the flavor is great!

Tuna Noodle Casserole from Scratch

Finally a recipe that doesnt use canned soup. I didnt add the cheddar cheese only bc I didnt have any. Turned out good and easy to make.

Chicken Broth in a Slow Cooker

Very easy to make. I used fresh parsley instead of the dried basil. Used the broth for a soup recipe also from allrecipes. Its great to make my own broth and not used store bought.

Lentil and Sausage Soup

I also cut up the carrots into small pieces. I used a home made chicken broth (recipe from this site) only 6 cups of water bc my pot could not hold 8 but I think the soup is better with just 6. And I didnt add the pasta, felt no need for it. Really tasty soup, filled me up.

Amazing Pork Chops in Cream Sauce

Made exactly as written. I had 4 big pork chops and the amount of sauce was perfect. Dont understand people who say this sauce has no flavor. The wine and mushrooms give it a great flavor. Will def make again!

Beef Stew with Dumplings

Pretty good stuff. Turned out thick, the way i like it. Followed recipe but just had to had more liquid, so I added about 2 cups of beef broth. Love the dumplings!

Spinach Tomato Tortellini

A def keeper. I only had a can of plain diced tom so I sauteed some onion and garlic before adding the tom and seasonings to the same pan. Everything else I followed exactly, came out really creamy and tasty

Fruit, Veggie, and Tuna Salad Wrap

Im always looking for new can tuna recipes and this one is a keeper! I doubled the tuna and mayo, halved the spinach and used 3/4 cup blueberries. Everything else kept the same. Not sure if the mozzarella cheese is needed, I used it becauce I had it. I ate this with honey wheat pitas. A nice light and healthy lunch!

Amazing Pork Tenderloin in the Slow Cooker

Really good pork tenderloin! Moist and flavorful. I made my own dry onion soup mix (also from this site) I put a thermometer in the meat and cooked it until it read med 160. Sorry, I cant remember how long that cooked for.

Banana Sour Cream Bread

I halved the recipe and used 1 egg and 1 cup sugar (thought 11/2 cups would make it too sweet) I only had a 9x5 loaf pan and baked it at 325 for one hour. Turned out really good. And don't skip on dusting the pans with the cinnamon sugar mixture, its a nice touch to the bread
