Cheesy Sausage Zucchini Casserole

Perhaps one of my new favorites -- definitely going to become a staple in our house! The only change I made to the directions was to only bake for 40 minutes and that seemed like plenty to us!

Pasta and Bean Casserole

I substituted pinto beans for the garbanzo beans but was still disappointed. First, it was way too dry -- too much pasta, not enough of the "other stuff". Second, I didn't know this, but I'm not a fan of coriander. I didn't even finish my bowlful. I would have to change it a lot to make it again.

Veggie Pot Pie

This was very yummy and I definitely will be making it again! My one caution -- the picture of this recipe shows a pie plate but the recipe calls for an 11x7 baking dish. I had planned for a pie size, so I just added in a cup of frozen corn and a cup of frozen peas, and I had enough filling for 2 9" pies. We froze one and will have it to use at a later date. We are excited about that!

Spicy Mexican Style Zucchini Casserole

This dish earned rave reviews from both my husband and myself! The only tweaks I made were to cut the cayenne pepper to 1/2 teaspoon and to not put the extra cheese on top of the casserole. Also, we assembled the dish over the weekend, refrigerated, then heated in the oven during the week. I found I had to double the oven time to 40 minutes with the dish being so cold to start with -- so just keep that in mind if you use this approach too.

Quick and Easy Stuffed Peppers

Thanks for sharing such a wonderful recipe! My husband and I are always quite busy, and this is a healthy meal we can make quickly. When making, I always add a little more of each ingredient that is in the filling so we have plenty to satisfy us.

Tofu Stroganoff

This recipe was good, but a little too much tofu for me. Next time, I will make two adjustments -- 1 package of tofu instead of two and more soy sauce (really wonderful flavor).

Addictive Sweet Potato Burritos

I was a bit leery of trying this receipe, but we were looking for something a little different in our vegetarian diet and these didn't fail to delight! I made them exactly as the receipe stated -- a lot of work but well worth it in my opinion. Next time, will probably make a double batch and freeze half to microwave later for quick, easy meals. Yum!

Peanut and Tomato Stew

Huh, this was an interesting recipe. I felt it would have been better without the peanuts and much less water. Doesn't look appetizing and very bland. If I made again, I would definitely add more spices and I did this time around and leave out the peanuts.

Veggie Vegetarian Chili

This was the best chili recipe I have ever tried! The mushrooms were a great touch; they gave it sort of a meaty texture. The only two tweaks I made: omitting the carrots and tossing everything in the crockpot to simmer all day while I was at work. We will DEFINITELY make this again!

Seven Layer Tortilla Pie

Really great recipe that my husband and I enjoyed very much. I didn't have the tomatoes so I replaced with a tad extra salsa and it worked out just fine. I will make only two changes next time: add corn and cut out the chopped cilantro.
