Shrimp Scampi V

I just made this dish as written except I didn't have any Parmesan cheese...It was good but...to me was lacking enough flavor...I would add the juice of a lemon for 4 servings...and I would also substitute half (or all) olive oil as another reviewer suggested...I also added about a cup of cherry tomatoes sliced in half length-wise...Other than that, I used peeled deveined shrimp...Just had to remove tails...

Oatmeal Pancakes II

I just made these for my husband and myself and they were very good! I did tweak the recipe for our tastes...I used whole wheat organic flour, organic whole oats and replaced the sugar with a tablespoon of Maltitol (less sugar)...I didn't have buttermilk so I used a 6oz. container of organic vanilla yogurt plus 1/4 cup fat free milk...I don't have a food processor so I put the liquid ingredients in the blender first and then added the rest...I let it rest for about 10-15 minutes.. In a small pot on the stove over medium heat I put in half a bag of frozen mixed berries, about 1/4 cup water and a tablespoon all fruit cherry jelly... Let simmer while the pancakes are cooking...The results were amazing! Very light, delicious pancakes! Serve with butter, Agave Nectar and a little Redi Whip if desired...

Chicken Marsala

I prepared this recipe exactly as written except that I took another reviewer's advice and doubled the sauce ingredients...It was fairly easy to make although I think it takes longer than 15 minutes to prepare! I found it tasty however, I made another Chicken Marsala recipe a few weeks ago and prefer that one...

Classic Cuban Midnight (Medianoche) Sandwich

I have made this many times and it is very good...I was born in Ybor City, Fl and am of Cuban decent...It irks me when people in restaurants call their sandwiches "authentic" Cuban...If it's not on real Cuban bread, it is not an "authentic" Cuban sandwich...Otherwise, very good sandwich...

Creamy Butternut Squash Casserole

Just made this recipe...I didn't have any mozzarella so I used other shredded cheese...Used low fat Greek yogurt in place of sour cream and it was very tasty...My husband loved it! We will have the leftovers for breakfast with crispy bacon...I agree with the other reviewer: It does take a while to peel and cut up the squash...Make sure you have a good sharp knife and cut the squash into bite size pieces if you don't have a food processor...

Yummy Sweet Potato Casserole

I made this exactly the way written except I omitted topping, added a package of pecan/cranberry topping found in the produce dept. and it was DELICIOUS! Not too sweet but sweet enough...This is a keeper!

Easy Pie Crust

I used this recipe for a homemade pecan pie but used unrefined organic coconut oil...I will try only 1/2 teaspoon of salt next time as some other reviewers suggested...Otherwise, it was easy to make and very tasty though crumbly...

Cousin Cosmo's Greek Chicken

I have made this twice now and the people I have made it for, loved it! I had to use chicken cutlets because the store was out of chicken breasts (I shopped late at night) so I cut them into bite size pieces, sauteed them in the oil, added the rest of the ingredients and simmered until dinner...I also substituted 1 cup Pomi chopped tomatoes instead of the ripe tomato and it was delicious! This recipe is definitely a keeper!
