Overnight Blueberry French Toast
Loved it! It probably would have been amazing without my changes, but this is what I did: -Used 3-day-old french bread (most of a loaf) -Used a 2qt 11x7 pan -Used only 1 block of cream cheese (was perfect amt. for this size pan) -Used 10 eggs; made sure I really mushed that top layer of bread cubes to get coated in the egg, esp. in the morning before baking -Sprinkled some cinnamon & sugar and some of Penzey's cake spice on the top mid-baking (it was an after-thought and a good one!) -Dolloped 2 Tbsp butter over the top out of oven I didn't make the blueberry sauce b/c I had some leftover from another recipe. It had lemon and an edge of salt--good! Served with warmed blueberry sauce and warm maple syrup. Yummmm!!!!

Granola Bars III
Great granola bar! Just the chewy-yet-holds-together snack we were looking for! I cut the brown sugar down to just a little over 1/4C, substituted sunflower kernels and some shredded coconut for the nuts (hubby's allergic), and didn't have honey so I used brown rice syrup instead. Sugar could probably even be reduced further. Baked 25 minutes and they were excellent! I can see taking this recipe in MANY new directions playing with mix-ins!

Quinoa and Black Beans
I doubled this recipe to use as a main dish for my family of 4 (husband who just ran 16 miles, hungry 4 yr old boy, 8 yr old girl, and a very hungry Mommy) and we still had leftovers for lunch (or side dish at dinner the next night). Changes: Did NOT double the beans--2 cans was plenty, even when doubled. Added a bit of chopped orange bell pepper when sauteing, and then a can of Rotel tomatoes w/ the liquid. It was a delicious meal. Served w/ tortillas and avocado.
