Refreshing Cucumber Salad

Kohlrabi and Apple Slaw

Fantastic flavor. Mine was pretty thick. Took it for a soup cook off but didn't win - probably because it was so thick. Had several tell me they loved this one more than all the others though.

Sweet Potato and Black Bean Chili

This is very good, but even with eliminating some of the spicy seasonings (jalepeno and hot pepper), it was still pretty spicy for me. I will make it again but tone it down even more. Adding the sour cream is a must to finish out the flavors.

Good for You Greek Salad

Very good. Used the suggestion of adding some red wine vinegar -- just a few sprinkles. I used Kalamata olives but think I'll use plain black olives next time because the other add too much tang and takes away from the dressing flavor.

Excellent. I like that I can use canned mandarin oranges and skip all the peeling and cleaning. However, doesn't last longer than 3 days before it becomes spoiled.

Asparagus and Crab Salad

Hubby and I both liked it a lot. I thought it needed a little more zing to the dressing, or maybe just more dressing. We ate it as an entree for dinner and then lunch the next day. I didn't saute the crab in bacon grease because I just couldn't bring myself to do it. I used real bacon, imitation crab, pencil thin asparagus, and extra hearts of palm. I did put the tomatoes in the oven with the asparagus, but made sure they were cooled completely before adding them to the salad for stirring. I'll make it again but maybe with a smidgen more lemon juice.

Veggie Lasagna Florentine

This was fantastic and absolutely a keeper. Hubby and I are new to the vegetarian diet and are thrilled to have a dish that is so satisfying without tofu (yuck). I followed the reviews and skipped the brown sugar (I think the tomatoes and tomato paste make it sweet enough), but I did not substitute with red papper flakes. I also doubled the herbs, and then added some dry spaghetti mix (which eliminates the no-preservative effect) because I like my sauce rich and robust flavored. I used part-skim ricotta and fresh spinach and kept adding the spinach to the blender of ricotta until it was a little greener than the color of green goddess dressing. I also used fresh mushrooms because of my preference for them. I shredded the zucchini/squash and doubled that as well. I had enough marinara sauce left over for a quick night of small spaghetti dish. We ate half for dinner and lunch the next day (double servings w/o any other sides), and then I froze the other half for a future meal.

Asparagus Lasagna

This recipe is a winner for the amount of prep time; the taste; and the portions. I think I'll add some addl seasoning next time. Leftovers were even better. I used fresh asparagus instead of canned because I just can't do canned.

Delicious Barley Bake

This had entirely too much garlic ... so much that it was "spicy hot". Without that over-powering garlic, it really had no flavor. Will NOT make this again. Hate that I wasted so much time and money on it.

Grilled Lemon Chicken

This was fantastic just as the recipe calls. Hubby is sick of eating chicken breast and he raved about this one. Even the cooking time is perfect. I did add 4 extra minutes of cooking time because the breasts were a little thick. This is a restaurant quality dish.
