Soy Ginger Salmon

A GREAT marinade!!! Light but very favorful....does not overwhelm the salmon. Got rave reviews when I served it (bravely for the first time ever) at a family reunion! The other reviews sold me on it.....so let mine sell you. Its fabulous. I didn't try to create a sauce. I used minced garlic, reduced sodium soy sauce and just put the lemon pepper in with the juice, etc.

Lentil and Smoked Sausage Soup

Love lentil soup, but this kicks it up a notch! I doubled+ the lentils and just used the whole 16oz bag, a whole but small head of cabbage, 2 cans of tomatoes and the turkey smoked sausage I had on hand. Doubled all of the other ingredients. A wonderful stew, thick and just a perfect heat from the cayenne that you usually don't have in lentil soup. LOVE IT!

Crab Cake Sauce

Ok....this is amazing stuff. I made it last weekend to accompany my crab cakes and just LOVED it. It makes a lot for 2 people, but then ended up eating it with chicken, eggs, cottage cheese....on top of bread, all week long. It is SO darned good!!! I used all lowfat ingredients, mild salsa(because my hubby doesn't like hot) and even he thought it was fabulous!! THanks, Joan!!

Parmesan Orange Roughy

Ok...this is wonderful! Since I am cooking for 2...I am using 3 filets so there was plenty of good protein...I reduced the amount of bread crumbs. My hubby loved it. This is perfectly delicious. Thanks

Whole Wheat Seed Bread

When they sold out of our favorite bread at the farmer's market, I came home and searched for a bread to make. This is wonderful. It is dense and very tasty. It does make ALOT of bread...definately use more than 2 bread pans!!!

Shrimp with Tomatoes and Feta Cheese

Ok, hubby is not a big "hot" fan, so I scaled that down...but other than that this is SO amazing!! I have served it muliple times to hubby and friends (and planning to serve it tomorrow night for my boy and his new girl.) It really is great....easy...delicious. Thanks for a truly wonderful recipe!

Mediterranean Quinoa

I did make a couple of changes....mostly because of what I had in house, but this was GREAT! I didn't have broth...so I dropped 4 bouillon cubes in 4 cubes of h2o. I didn't want to open tomato puree, so I skipped it. I only had one orange and one yellow pepper, so that's what I used. I had to cook it a bit longer to reduce the liquid, but, boy was it good!! thanks!!

Chicken Breasts with Balsamic Vinegar and Garlic

This is just lovely! Cooked exactly by the recipe...served over whole wheat couscous...with roasted asparagus. Devine. I'll use the leftover mushrooms with breakfast.

Posh Squash

I am not a fan of "sweet" vegetables, so this recipe appealed to me. I had one butternut that I had no idea how much it weighed....so I just followed the directions, used one egg, fat free mayo (probably less than 3/4 cup) and grated Kraft blend of 2% white sharp cheddar/swiss and parm cheese...and OMG!!! Fabulous!! Thanks so much.

Halibut with Creamy Garlic and Herb Sauce

The sauce along is worth making this recipe!!! It is wonderful. I did make a couple of changes: used nonfat half and half, didn't have red pepper, used about a tsp of red pepper flakes. Hubby poured it over everything on his plate. It seems it reminds him of a Bernaise sauce....whatever it was WONDERFUL!! Thanks!

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

I joined a CSA this year and didn't know what to do with nappa cabbage and found this recipe. Awesome, just awesome. I substituted chicken breast. Just a nice heat...just as is. If you really like heat...add more cracked red pepper to the saute. I also used whole wheat angel hair pasta. It does make enough for 6...so cut back if you are cooking for less. Thanks "thriftybob".... I'm sharing this with my CSA!!

Tomato Feta Salad

An awesome summer salad. I used the tomatoes I had on hand, two gorgeous ones from the farmer's market...de-seeded and chopped.....cut everything in half....and LOVED it. Thanks for an easy but wonderfully satisfying meal and method to use fresh summer tomatoes!

Zucchini Patties

I did make some changes, but the original recipe gave me the tools to make them!! Added the garlic, used Italian panko and had some leftover egg whites. Made little patties out of some of it....fried in canola oil.....made a few little "meatballs" and baked at 400 for 20 min.....just to try different cooking style. Both were great. Hubby loved the fried (I did,too, but didn't want the calorie!!) Served them with wwheat angel hair pasta and thick spaghetti sauce!
