Creamy Au Gratin Potatoes
Made this for Easter dinner. Added a bit of dash and garlic to the potatoe mix. It was delicious. My whole family loved it and I must tell you that I have two excellent chefs in my family. I found it good as well, but presentation left some to be desired. The sauce was not creamy, but grainy. Maybe I was expecting something creamy like scalloped potatoes, but it did not happen. All in all, the taste was worth a five, but for presentation I rated it with a four star. Thank you for sharing. Will try it again but unfortunately it will no longer be low fat and that totally defeits the purpose of cooking for that one person on a special diet.

Eggplant Parmesan II
I have changed it a bit. Washed my vegetable well, left the skin on amd sliced it in the lenght, very thin. Used the same breading and fried it in olive oil for just a minute to brown. Sprayed a cookie sheet, added spagetti sauce on top followed by a mixture of italian cheeses and baked at350 for 10 min. Excellent with a ceasar salad The eggplant was crisp amd delicious The 4 star is for the change

Anniversary Chicken I
It was ok, but I'm afraid a three star is all I can give it. My family also felt it was good, but just ok I expected more definite flavors and a little less dry. The inside of the chicken was moist, but the outside was dry. I added the cheese in the last 10min in order to prevent this. I think this is a good starting recipe, but something is missing.
