Janet's Rich Banana Bread

Just tried this recipe for the first time and I LOVE it! I did mash the bananas and added a bit of applesauce to make 1 C of fruit. Also I like a bit of cinnamon and nutmeg so I added 1/2 t of each. I did not have sour cream so I used plain yogurt instead. My butter was already soft so I whipped it with the sugar then added the eggs and whipped again. I used my mini loaf pan (makes 8) and baked 30 min. The loaves raised well, baked thoroughly and look beautiful. The texture is a nice soft, moist crumb and the exterior is perfect. This is definitely my new favorite banana bread recipe and one I am sure I will be making many times!!

Next Day Turkey Soup

Delicious! I used my leftover thanksgiving turkey carcass cooked in the crock pot all afternoon with the onion, garlic, fresh sage and added tarragon. The last hour I added red potatoes, butternut squashed cubed small. I added my green beans a few min. before serving because they were leftovers and I did not want to overcook them. I added 2 more cloves of garlic and extra celery leaves for depth of flavor. I think the squash added to the flavor as well. I did cook a bit of rice in chicken stock on the side but it was not necessarily as this soup stands on it's own and was very hearty without pasta or rice. I think the fresh sage is especially important, don't skip this ingredient if it is available! I will be keeping this recipe, yum...

Pumpkin Ginger Cupcakes

Delicious! Very moist and wonderful with cream cheese frosting. I made this recipe with fresh pumpkin so I added a bit more floor to compensate. Did not have all the spices so I used pumpkin pie spice and extra ginger because I did not have the crystallized. I even changed the pudding from butterscotch to vanilla (that's all I had in the house) And they still came out tasting yummy! It seems that you cannot go wrong with this one, it's a winner!

Pecan Pie

I made this pecan pie recipe for Thanksgiving. After reading the reviews I decided to make it as a tart because it is such a sweet pie. The result was fabulous! It was delicious and very popular. This was my first pecan pie and I couldn't be more pleased with the result. The only thing I would add to the instructions would be to mix (not beat) the boiled sugar mixture into the egg. I beat mine and I feel it was a bit too fluffy as it consumed the pecans I placed on top and ruined my beautiful pecan design. However, it was still the best pecan pie I have ever tasted and I will be making it again noting this change.

Pumpkin and Sausage Soup

This soup is healthy and amazing...we made it with fresh pumpkin and a spicy gourmet chicken sausage and only pureed slightly so it was still chunky...left out the cream to cut down on calories and fat. Awesome and interesting. The whole family LOVED it!

Thumbprint Cookies I

Delicious! When I couldn't find my the original recipe I'd been making since childhood, I found this one...pretty close. I raised the temp to 350, made my thumbprints before baking (12-15 min) and added the jelly without a second trip to the oven. Perfecto! just as I remember! Thanks!
