BBQ Tuna Fritters

Reviewed: Jun. 29, 2007
My husband is a fussy eater, and my kids weren't sure about the name, but it's become a big hit! I left out the onions, hot sauce, and savory. I also fried half in olive oil and baked the other half. We couldn't make up our minds which we liked best. Thank you! So easy to make and it will become a family regular!

Slow Cooker Chicken and Dumplings

Reviewed: Jun. 3, 2008
I let my slow cooker do my Sunday cooking...and this recipe made it great! I,too, used chicken broth instead of water. I also used less biscuit mix (just one 7.5 ounce can). I added a few herbs/spices and let it sit on low the entire time (7 hours). My husband was a bit nervous (he can be a fussy eater), but he loved it and said it's a keeper. The kids and I agreed. Thanks for sharing!

Quinoa Side Dish

Reviewed: Jun. 10, 2008
For a whole grain alternative, this is a great dish. I used chicken broth and did not add salt or any herbs/spices. I served it as an entree with two salads (one organic mix lettuce and the other cucumber). My family loved it and we'll be making it again...soon, I'm sure! :)

Slow Cooker Lentil and Ham Soup

Reviewed: Jan. 12, 2009
Yum! Yum! Yum! The best lentil and ham soup ever! Next time, I'll use the low-sodium broth as it was quite salty. My dh is not a big soup fan, and he really enjoyed this. Thank you for sharing!

Healthy Banana Cookies

Reviewed: Jan. 17, 2009
I changed it up to add: 2.5 c. oats a little more than 1/3 c. applesauce 1 tsp. cinnamon 1/2 t. nutmeg 3/4 chopped raw pecans 2 TB. wheat germ 2 tsp. vanilla ...no oil, no salt (not needed at all). I flattened the cookies out before baking, and they came out perfectly. They are a smash with my family.

A bit heavy...like the density of a quick bread, but hearty and good. :)

Grandma VanDoren's White Bread

Reviewed: Jul. 30, 2011
As others have said, it's light inside, crispy/crunchy (lightly so) on the outside. It makes three great loaves. It rises very quickly, so wait three times is still faster than a typical recipe. I'll be making it again! Thank you!

Potato Curry

This is a family favorite. You do NOT need ghee. I use real butter and it's fantastic! I DO, however, almost double the spices. :)
