Banana Chocolate Chip Cookies

These turned out very cake/muffin like, but have I nice flavor. I prefer less cake like cookies, but these are still pretty good. Changes I made: 1 t baking powder, subbed 1/4c nectresse for the sugar, used 1.5 c all-purpose and 1 c whole wheat flour, used 2 bananas (slightly less than a cup mashed), added a small splash of almond flavoring, and used 1/2 cup butterscotch chips and 1/4 c sweetened coconut flakes instead of semi-sweet chips. I also let the batter sit in the refrigerator for a while to make it less sticky.

Oven Brown Rice with Carrots and Mushrooms

My picky mom and dad loved it. I wasn't a fan of using canned soup or the creaminess but it was still good. I subbed frozen peas for the mushrooms since none of us like them.

Vanilla Banana French Toast

A delicious filling breakfast for one! I mashed the banana and didn't need all of it and used a pre-made cinnamon sugar mixture I had leftover. Yum! I'll definitely remember this and make it again.

Premium Pizza Crust

Country Pumpkin Muffins

Very good muffins, but I made the following changes: 1 cup sugar, Ener-g egg replacer instead of eggs, 2 cups pumpkin, water as needed, 1 cup all-purpose and 2 c whole wheat flour, 1/2 t allspice instead of cloves, no raisins or walnuts.

Almondy Warmth Cookies

These turned out really good! I didn't have nutmeg, so I used 1 t allspice instead. I also used vegan sour cream, and vanilla-nut extract instead of the bourbon. I also added some white and dark chocolate chips. Very yummy!!!

Easy Homemade Vanilla Ice Cream

This was awesome and I got complements from everyone who tried it. I used the freezer method, and it was much better than ice cream that I've made using an ice cream maker. I made some cookie dough (from an eggless cookie dough truffle recipe on this site) and mixed that in too.

Cinnamon Pancakes in a Jar

Good but could use more sugar. I use half white flour and half whole wheat flour. I used unsweetened almond milk (didn't have normal milk) and applesauce instead of the oil. Like other reviewers did, I used 1 cup milk and 5 t cinnamon.

Thai Curry Tofu

Very good! I added half a red pepper, frozen carrots, broccoli and cauliflower,over a 1/4 t of ground chili pepper, and about a quarter cup of water. I used a 13.5 oz. can of coconut milk.

Caldo de Res (Mexican Beef Soup)

I used two packets of sazon and chicken instead of beef. I also only used a 1/4 head of cabbage and frozen corn instead of corn on the cob. It was delicious, but it does make a lot! I had leftovers after serving to 6 people

Oatmeal Cocoa Macaroons

Substituted 3/4 margarine for the shortening, used 1 cup of coconut and added a dash of vanilla. Boiled for 1 minute as suggested. Should have boiled them longer because of the high humidity level, they didn't set up right. But they taste good.
