Irresistible Double Chocolate Muffins

Although I have eaten better chocolate muffins, I still gave this a 5 because of it's health factor. I didn't even realize there was no oil until after I baked it. I didn't have enough flax seed so I used 1/2 c. and upped the wheat germ to 3/4 c. I also opened a huge can of pumpkin so I threw in 1 c. of puree. I doubled the recipe and it turned out great. I finished baking in about 22 minutes or so.

Buttermilk Corn Bread

I added a tablespoon of honey to the recipe and followed everything exact. It was super easy to make and I just baked it in an 8x8 pan lined with parchment paper. When it was hot out of the oven, my first bite tasted like flour but once it cooled (perhaps it cooked for a few more minutes) it was tasty. I'd probably add a touch more honey/sugar next time but I really like how I didn't need any oil for the recipe. The parchment did the trick! Will definitely be making this again!

Oatmeal Soda Bread

Super easy to make. I had leftover seeds that I mixed into the flour mixture and over the top of the bread (poppy, flax, sesame), hence the picture I posted. Turned out great. Will definitely keep this on hand.

Sky High Yorkshire Pudding

I left everything on the counter to warm up to room temperature first. I mixed everything in a large Pyrex measuring cup for easy pouring so I wasn't able to whisk until frothy. I just whisked until I saw a few bubbles surface. I put the pan on the lowest oven rack and turned down the temp to 350 after 10 minutes.

Apple, Beet and Avocado Salad

I definitely modified the recipe to what I had on hand. I made the dressing out of red wine vinegar, balsamic vinegar, honey, oil, mustard, celery seed, salt and pepper. I also didn't have any salad greens. I toasted up some sliced almonds and added some Boursin cheese. Turned out delish. I know it totally veered away from the recipe but the beet/apply/avocado/onion mixture was perfect!

Chocolate Zucchini Bread I

I didn't have the unsweetened chocolate on hand like most reviewers so I took the suggestion of 3 tbsp cocoa, 2 tbsp melted butter as a substitution. I also used 1/2c of oil and 1/2c of applesauce and added 1/2c of fat free sour cream. I baked them as muffins and a loaf and the muffins took about 18-19 minutes and the loaf took about 40 minutes or so. I also only used 1 1/2c of sugar rather than the 2c. Next time i'll likely add a bit more cocoa powder.

Best Big, Fat, Chewy Chocolate Chip Cookie

these were very good. I made 2 batches by doubling the recipe but realized it was a lot of butter to use so i halved it with apple sauce and just scooped it out onto my sheet, threw them in the freezer for about 10 minutes. Baked them for 16 minutes and let them cool on the tray till they were cool enough to handle and gobble up. I read that they go hard so i put them in a ziplock while still semi warm. Lets hope they stay soft till tomorrow when i bring them in to work!

Carrot Cake III

absolutely delish!! I did as others have suggested. I did the 3/4c oil and 1/2c apple sauce. I also used 1/2c of bread/pastry flour to give it a bit more structure. I used the 1/4tsp of nutmeg and an extra splash of vanilla. I ended up making muffins with the batter and baked them for about 12 minutes and i only made 1/2 the icing and it was plenty.

Black Bean and Couscous Salad

Tasted awesome. I used a can of black beans and a can of chick peas. I thought I could omit the cumin because I didn't have any on hand but I did end up getting some and it makes a WORLD of difference in taste!! I also added extra cilantro and some extra salt and pepper to taste. Will definitely make this again and again.

World's Best Lasagna

i didn't have the fennel seed and i used spicy sausage instead of the sweet sausage but it still turned out great! Used whole wheat pasta and didn't stew the sauce for as long as the recipe called for.

Herb Roasted Pork

I didn't have any sage so I just used garlic, salt, pepper and rosemary. Turned out great. Baked it with some yams, potatoe, onion and apple. The sauce really helped. Will make again and again!

Eggplant Parmesan II

i tried this today hoping it'd be good since all the reviews were so good but it ended up tasting like soggy bread. the bread crumbs soaked up way too much of the pasta sauce. overall it just tasted bad.

Alfredo Sauce

I overcooked it because I was trying to cook too many things at once and it ended up being really chunky, but still tasted delish! Had to add a bit of salt because I didn't use 1 1/2c of parmesan. And I didn't use heavy cream, just some 35% cream and skim milk and I also cut back the butter to about 1 tbsp.

Beth's Spicy Oatmeal Raisin Cookies

I don't bake very often but I needed to make some cookies for a gift and this recipe popped up on the top 20. Easiest recipe to follow and I also used 3/4 cup of butter instead of shortening and divided the dough into 3 and used dried cranberries, raisins and chocolate chips. turned out perfect! a touch soft when they came out of the oven but a few min to rest on the pan and then with a spatula over to a cooling rack and they were perfect!
