Buttermilk Wheat Bread

I love this bread! I love the tangy flavor from the buttermilk. I used bread flour instead of all purpose and it turned out soft and fluffy. I also used 1 tsp salt and 2 tsp yeast. Such a nice loaf and a great way to use up my buttermilk.

Roast Sticky Chicken-Rotisserie Style

This is the first whole chicken I have made that came out juicy. I only had one bird (3.6 pounds) and I used all of the seasonings on it and marinated it overnight. Mine was done in 3.5 hours. Thanks for this great recipe!

Apple Pie Muffins

These are great muffins. I made no changes to them and they are spectacular. I was hesitant with all that sugar because I don't like overly sweet things but they aren't too sweet. I think I will reduce the sugar in the topping though. Really good muffin recipe.

Easy Red Beans and Rice

I enjoyed this dish very much. It is lighter and not as heavy as regular red beans and rice which I liked for a change. I used chopped celery and a few extra cloves of garlic just because I had it. I also added in about 1 tbsp. of cajun seasoning. It was really good.

Ronaldo's Beef Carnitas

This turned out fantastic! I browned the meat on both sides in a very hot cast iron skillet then poured on the spices and a little beef broth. I then covered the skillet with foil and put it in the oven. It is fall apart tender and tasty too. (I didn't bother wrapping the meat itself in foil- no need to do this.)

Pretzel Dogs

Yum yum! These couldn't have been easier to make. I halved the recipe and ended up with enough dough for 8 hot dogs. The taste is amazing. The pretzel dough on it's own is so good. Thanks for submitting this recipe What's for dinner, mom.

Man Dip

This was crazy good! I added a few things but just for personal preference. I halved the recipe and used a can of chili with no beans. I had leftover taco meat and added that in too with a few drops of Tabasco and ground chipotle peppers. So good.

Garlic-Lemon Double Stuffed Chicken

I halved this recipe but doubled the lemon juice. I followed the recipe exactly except seasoned the chicken with salt and pepper and the breadcrumb mixture as well. It turned out really well. I had to bake mine an extra 10-15 minutes. Very good!

Uncle White's Bread Machine Rolls

I wanted rolls to go with dinner and had buttermilk to use up so this was the perfect recipe. The rolls turned out great. They have a great tangy taste from the buttermilk which I enjoy because they're not overly sweet. I didn't change a thing with this recipe.

Cheddar Bay Biscuits

These are great with additions. I used more cheese, seasoned salt and garlic powder in the biscuit mix for more flavor and a dash of cayenne pepper in the butter mixture. Mine took way longer to bake than 12 minutes. They tasted great and none were left.

Creamy Chipotle Chicken

This was surprisingly good! I reduced the chipotle peppers to 2 to try it out and next time I will use 3 because we like spicy food. I had no problems with the cream cheese clumps as others did and I threw everything in the crock pot (1 hour on high, 3 on low) and it was done. So good served over yellow rice.

Whole Wheat Pumpkin-Applesauce Muffins

These muffins were good but not great. According to reviews it seems like these are better the next day so I will wait to see tomorrow if these improve. I couldn't really taste anything in these so the spices need to be increased. I used home made chunky applesauce and followed the rest of the recipe as written. These are good but could be better with tweaks I guess.

Layered Chicken and Black Bean Enchilada Casserole

This was an easy, tasty recipe. I didn't use canned enchilada sauce but instead used the recipe from here for "Mrs. Espy's Enchilada Sauce" and followed the rest of the recipe from there. Mine had good flavor and I think it depends on the enchilada sauce you use. I did end up using more corn tortillas. Thanks for this easy recipe.

Mrs Espy's Enchilada Sauce

I enjoyed the flavor of this sauce with additions. I like onion and garlic in mine so I stirred in chopped onion and garlic in with the spices and cooked them in the oil. I added a touch more tomato sauce and cumin to taste. I also used chicken broth in place of the water as other reviewers suggested. This sauce has a nice, silky texture.

Slow Cooker Spicy Black-Eyed Peas

I made these today for our traditional New Year's Day dinner with collard greens. I left out the peppers since I didn't have them and added a few red pepper flakes for the jalapeno. Mine were done in about 6 hours and I didn't soak them ahead of time. I like the ease of preparation of these and the taste was good.

Comforting Chicken

I would rate this 4.5 stars if I could. I did have to make some changes to this for personal taste. It was bland as is so I had to add in garlic with the onion and pepper and added in garlic and onion powder. With the additions it turned out great.
