Slow Cooker Pinto Bean Bonanza

Reviewed: May 7, 2011
This was fantastic and so yummy! I didn't pre-soak or pre-cook the beans. I put the mixture on high for 4 hours and then low for 4 hours and it turned out perfect. No need to pre-soak or pre-cook. I left out the bacon and tomato paste since I didn't have it. I also used the whole pound of pinto beans and only 6 cups of water were needed. Thanks for this tasty recipe.

Garden Penne

Reviewed: May 5, 2011
I absolutely love this! Great way to use up veggies. I halved the recipe but left the cheese the same. I used one can of stewed tomatoes and one can of diced tomatoes (seasoned with garlic, basil and oregano). Thanks for this easy recipe!

Blonde Brownies I

Reviewed: May 3, 2011
These taste great but they're not a blondie to me as much as a big chocolate chip cookie. I mixed these up in 5 minutes and didn't add the extra chocolate chips on top since 2/3 cup was enough for me. I had to bake them a little longer and I greased the pan and they still stuck to the pan but they were really good. Next time I have a chocolate chip cookie craving and don't want to make cookies I will make these for ease of preparation.

Hungarian Goulash I

Reviewed: May 1, 2011
This was good but a little bland. I browned the meat first then the onions and garlic. I also browned the paprika and tomato paste in the oil and proceeded from there. I had to add a dash of sugar to cut down on the bitterness. There was something missing but I can't put my finger on it. I will make my tweaks next time I make this.

Fruit Salad Dressing

Reviewed: Apr. 24, 2011
This was terrific and exactly what I needed for a fruit salad today. I reduced the sugar to 1/4 cup and it could have been less sweet for me. I used it on a combination of strawberries, pineapple, grapes, honeydew, kiwis and mandarin oranges.

Unbelievable Chicken

Reviewed: Apr. 22, 2011
Absolutely wonderful chicken! I doubled the mustard and used a combination of dijon and coarse grain mustard. Other than that everything else was left the same. I marinated the chicken for 24 hours. The chicken was tender and juicy with the best flavor. I think this marinade would be great on pork chops too. Thanks for a great recipe!

Strawberry Oat Muffins

Reviewed: Apr. 21, 2011
These were okay but not great. I didn't make any changes to the recipe and made sure to measure exactly one cup of chopped strawberries. They didn't rise at all and yes my baking powder and soda were fresh. They were lacking flavor and the texture was heavy. I'm sorry this one just didn't work for me.

Brownie Frosting

Reviewed: Apr. 19, 2011
This frosting is wonderful and couldn't have been easier to make. I didn't have a grainy texture as other reviews have mentioned. I used bittersweet chocolate and could have used less sugar for my taste since it's very sweet but very good overall. It is pourable and hardens like fudge. Great recipe to have on hand.

Uncle Wynn's Bread Machine Rye

Reviewed: Apr. 17, 2011
I really love this rye bread. I followed the recipe exactly except I increased the caraway seeds to 1 tablespoon and salt to 1 1/2 teaspoons. I used finely ground cornmeal as well. I love how the cornmeal made a crispy, chewy crust. I used the multi-grain setting on my bread machine and it turned out wonderful. It was light and not heavy or dense at all. Thanks for a great recipe!

Peppy's Pita Bread

Reviewed: Apr. 16, 2011
These turned out well for me. They were fluffy and the pocket formed easily. They were kind of bland but I can always spice them up later. I didn't have a cooling rack to cook them on so I cooked them on a pizza stone and they turned out great. They went great with our dinner of khara masala balti chicken.

Blueberry Cream Muffins

Reviewed: Apr. 10, 2011
Tasty and easy recipe. I mixed all of the liquid ingredients together (including the sour cream) and folded the dry ingredients into that. I then added in the frozen blueberries. Mine took a few minutes longer to cook due to the frozen blueberries. I used half white and half brown sugar. These came out fluffy and light and not heavy like some muffins can be.

Pepperoncini Beef

Reviewed: Apr. 1, 2011
This was fantastic! I used a slightly smaller roast and trimmed almost all the fat from it. I didn't add the beef broth other reviews suggested because it wasn't needed. Tender, juicy, slightly spicy meat was terrific with provolone cheese melted over the top. I will definitely make this again.

Dark Chocolate Cake II

Reviewed: Apr. 1, 2011
After all the reviews I was expecting mega chocolate flavor but I didn't get it with this cake. It definitely is easy to put together and with ingredients I always have on hand. I didn't make any changes to the recipe other than using buttermilk in place of the milk/vinegar mixture. It tastes pretty good and the texture is fluffy like a boxed cake. I found it tasted better and the texture improved after sitting for a day. Maybe adding more cocoa would up the chocolate flavor for me.

Sarah's Dry Rubbed Chicken

Reviewed: Mar. 29, 2011
Wonderful chicken! I'm rating the spice blend itself and not the cooking method. I didn't change any of the measurements of the spices and it turned out wonderful. I coated boneless skinless chicken breasts with olive oil and then sprinkled the dry rub on liberally. I then drizzled more olive oil on top. I baked these at 400 degrees for 30 minutes and had tasty, tender and juicy chicken. Thanks for a great recipe Sarah!

Savory Corn Muffins

Reviewed: Mar. 27, 2011
These tasted great but were a little heavy. I had to add a considerable amount of extra buttermilk to get the batter to come together smoothly. I ended up with 18 muffins instead of 12. They tasted yummy and very buttery.

Marinated Baked Pork Chops

Reviewed: Mar. 27, 2011
These turned out tender and delicious. I doubled the sauce as suggested by other reviews. I added a few shakes of garlic powder, ground mustard and black pepper for kick. I let these marinate a few hours and then baked them. Mine were done in 40 minutes and 1 hour would have been way too long so check them often.

Pumpkin Muffins II

Reviewed: Feb. 27, 2011
Oh my gosh these are awesome! I used a 15oz can of pumpkin puree for the sugar pumpkin. I decreased the cloves to a few dashes because cloves can be overwhelming. I was out of allspice so I added a dash of ginger. I used half white and half brown sugar because I didn't have the full amount of white sugar called for. This recipe makes 24 muffins not 12 as stated. This is a fantastic recipe and would make great pumpkin bread as well.

Buttermilk Wheat Bread

Reviewed: Feb. 23, 2011
I love this bread! I love the tangy flavor from the buttermilk. I used bread flour instead of all purpose and it turned out soft and fluffy. I also used 1 tsp salt and 2 tsp yeast. Such a nice loaf and a great way to use up my buttermilk.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Feb. 20, 2011
This is the first whole chicken I have made that came out juicy. I only had one bird (3.6 pounds) and I used all of the seasonings on it and marinated it overnight. Mine was done in 3.5 hours. Thanks for this great recipe!

Apple Pie Muffins

Reviewed: Feb. 20, 2011
These are great muffins. I made no changes to them and they are spectacular. I was hesitant with all that sugar because I don't like overly sweet things but they aren't too sweet. I think I will reduce the sugar in the topping though. Really good muffin recipe.
