Roasted Vegetables

A tasty, versatile recipe. Contrary to the most popular review, it DOES taste good with dried rosemary and thyme; but, as with all dried herbs, you have to use less than you would with fresh herbs. Definitely play with the vegetable variety. The sweet potato and red pepper are my must-haves (so good!), but things like carrots and asparagus are good, too.

Baked Potato Soup

Fantastic, easy fall/winter comfort food! It's super filling and tastes indulgent, even though it's mostly chicken broth and potatoes. If you really want to elevate it, I'd recommend stirring a tablespoon of dijon mustard into the soup and using thick-cut applewood smoked bacon over the regular stuff. And if you're in a hurry, you can microwave the potatoes.

Sweet Italian Chicken Sausage and Tortellini Soup

This is pretty tasty given the minimal effort that goes into it--definitely one of my "lazy" meal standbys. A bit of grated parmesan on top goes a long way. This also tastes great with homemade or even jarred pasta sauce in place of the chicken broth!

Champagne Punch III

Crazy addicting! I forgot the carbonated water, but it was still delicious and a huge hit at my holiday party. However, because I used an ice ring (by filling half an angel food cake pan with water/fruit slices and freezing it), I'm not sure the extra liquid would have fit in the punch bowl anyway. My party guests drank the punch so fast that the ice ring had barely melted before the bowl was empty! I wish I'd bought enough ingredients to double the recipe. Everyone was talking about it the next day.

Sangria! Sangria!

This was a hit at a party I had; just be careful, because it packs a punch! I doubled the recipe but found it to be too citrusy, so on my next try I didn't double the fruit slices, and it was perfect. I also used ginger ale in place of club soda, but I'm sure it would be good without. Don't forget the cherries - I love the flavor they add!

Double Layer Pumpkin Cheesecake

This was my first cheesecake ever, but it was easy and got rave reviews! Many reviewers have offered changes, but I would argue that you don't need to change a thing about the ingredients (except maybe to use pumpkin pie filling in place of the puree and spices - it's easier and still tasty). Also, keep an eye on consistency; my cheesecake was still liquid after 40 minutes, but it was perfect after 55 minutes, as others have recommended.

Wonton Soup

I'm not particularly savvy when it comes to soups or Asian food, but I pulled this one off with ease. The filling was so good I considered ditching the wontons and grabbing a spoon! I didn't have rice wine so I used a bit of rice wine vinegar instead, and it turned out fine. Like others, I recommend boiling the wontons separately and then adding them to the broth before serving. I also added another can of broth; there didn't seem to be enough to accommodate two dozen wontons without having a really crowded bowl of soup.
