Deep Fried Turkey Rub

This recipe was phenomenal! I have never fried a turkey and was very hesitant. I got a great deal on the fryer equipment on Craigslist so I had to try it. I rubbed the spices inside and out, and under the skin after drying the turkey very well. I also cut off the tail for a better flow of oil. I did add the 1 T of salt as another reviewer suggested and since we can’t stand oregano I used basil instead. I also used Cracker Boy Original instead of a Creole spice. I let the bird sit in the refrigerator overnight. About an hour before the frying I let the bird sit out. If you mix the spices well you will not have clumps of any one seasoning in one spot. When I strained the oil with cheesecloth for the next use, (which will be this week) there was hardly any herbs in the oil, they mostly remained on the bird. Thank you for posting this recipe, I will use it again and again, and doubt I will ever roast another bird!

Broccoli Cheese Bake

The family loved it. Very easy to prepare. My broccoli stayed firm, and I used sharp cheddar and some parmesan. I added some onion powder and a little Texas Pete for some zing, very yummy.

Runza (meat pies)

I found this exact recipe on the University of Nebraska's website about seven years ago and have never bothered to try another. This truly is a fantastic comfort food, portable too. I brushed the tops with a beaten egg, it makes them very pretty. I double the recipe and after they are baked and cooled I put them in freeze freezer bags. They heat up great in the microwave. It's a good on the go treat. Better than going to a fast food place. I will try putting velveeta in them next time I make them as one reviewer suggested.

Apple Crisp II

OMG!!!This is the best apple crisp I have ever eaten! Thank you Diane Kester and many thanks to the reviews to help take it over the top! I headed the suggestions of no water none is needed; I used Granny Smith apples they make their own moisture. It was not dry at all. I added 1/4 tsp nutmeg 1/4 tsp. cloves as one reviewer suggested it made me think of thanksgiving and great times with great friends. I also mixed the apples with the sugar/flour spice mix before adding to pan. I added 1/2 cup of chopped walnuts after the butter was cut into the crumble topping. I will no longer look for an apple crisp recipe again. My family went ape over this. I would make this everyday if it wasn't so fattening!!!! I'm going to try this with peaches next.

Black Bean Soup I

This recipe is delicious! I used two ham hocks instead of the ham bone. I also added two cans of black beans and 1 Tbs. of liquid hickory smoke. Do not omit the vinegar! I prepared yellow rice to compliment the meal. This soup is just so yummy!!!Next time I will try adding two cloves of garlic and some hot sauce.
