Sweet Potato Chili

I used all ground turkey for this recipe and thought it turned out great (albeit, a bit drier). Really hearty and robust meal, and the sweet potato is a nice twist. I didn't cook for as long as the recipe indicated - maybe half an hour on the stove for the vegetables and spices, and then an hour once I added the meat. Still good.

Salsa Chicken

Chicken ends up moist inside. A quick and tasty recipe - not quite entertaining quality, but good for a weekday dinner. I used nonfat Greek yogurt instead of sour cream... it is sort of essential to this recipe if you eat it in a tortilla, so would say it's not really optional. Otherwise, chicken can taste a bit one note with not enough textural variation.

Chicken Souvlaki Gyro Style

This is really good. The marinade for the chicken is tasty, though could be a bit saltier (but keep in mind that the tzatziki and the feta are both salty too, so use a sparing hand). The tzatziki sauce recipe is nuanced and delicious - since I didn't have Greek seasoning on hand, I found a great recipe (using LOTS of different spices) at http://www.food.com/recipe/greek-seasoning-mix-61579. The sauce portion as written is quite large, and could probably feed 6-8 people, so the two of us had a lot of leftovers at the end. We ended up doing a variation using ground beef seasoned with oregano, garlic powder, salt, and pepper instead of chicken - WOW! So good with a side of diced and salted cucumbers and tomatoes and the leftover yogurt sauce, served with white rice or in pita. Delicious recipe... plan to do tons of variations on this in the future.

Hearty Hamburger Soup

This soup is pretty good. Major benefit is that it is VERY filling with the beef and the barley. When I ate it for lunch (sans anything else), it would keep me full way past dinnertime. I used a small can of tomato paste rater than the condensed tomato soup, which has too many artificial ingredients for my taste. Also, I used 1 lb of ground beef and that was a good ratio against the 1/2 cup barley.

Warm Belgian Endive and Pine Nut Salad

My issue with this is not so much the pine nut and endive pairing - it's a nice idea to complement the bitterness and austerity of endive with the full richness of pine nuts. The issue is the dressing, which is too sour and only highlights the bitterness in the endive. Dressing needs to be sweetened with maybe honey or maple syrup. Or alternatively, make the dressing a little creamier with a touch of yogurt. The dressing just needs to be rounded out somehow.

Broccoli, Leek, and Potato Soup

This is a good, solid weeknight recipe (not so much an entertaining recipe - could be because it wasn't as rich due to me having to omit bacon). I thought the flavors worked together nicely, the soup had good body, and it's very healthy. I didn't have leeks, so I added in 6 cut-up fennel stalks. In addition, I subbed in rice milk for whole milk, which worked quite well! Overall, pleased with the recipe, although I wish the final color was a little more vibrant (mine turned out grayish despite not overcooking the broccoli).

Russian Cabbage Borscht

Excellent recipe - flavor is robust and complex. Only suggestion is to increase the liquid portion - by the end of the cooking process, and especially after adding the tomato paste, the soup is very, very thick. Would suggest adding another 4 cups of liquid. I also added fennel to the stock.

Beet greens taste great! Never knew you could cook them. They taste similar (perhaps even better b/c they are more delicate, less tough) than red swiss chard. Straightforward prep.

Salmon Cheese Ball

Pretty good, could have used much more of a kick. Next time, I might try doubling the amount of horseradish. Serving size doesn't lie. I made this full size recipe for 6 people and had waaaay too many leftovers (more than half)! Tastes good on baguette slices. I also tried it as a sandwich with a thick layer of horseradish and arugula - could make great entertaining tea sandwiches!

Quinoa Salad with Grapefruit, Avocado, and Arugula

Very refreshing dish with a medley of highly complementary flavors. Great for entertaining. Even without the avocado, it works well. I only used about 1 tbsp of mint because I was afraid it would overwhelm the dish, but it could have actually used more - next time, will try 2-3 tbsp.

Vegan Black Bean Soup

Very colorful soup! I only used two cans of black beans and did not bother to puree / blend anything. I also added in some kale, which provided some great texture to the soup. It was nice and chunky! Next time, I would serve with a dollop of yogurt.

Agree with other reviewers that 1 can of black beans is enough. Interesting combo, but quite light. Would want this to be more flavorful, if it is to stand on its own vs. as a side dish.

Garlic-Herb Roast Pork

More like 3.5 stars. Nice paste, but this takes FOREVER to cook. I cut it up and pan seared it at the end. Also, the taste of the paste doesn't make it's way inward very well. I could see this as a great seasoning for pork chops though. I used dried herbs (1/3 dried to 1 fresh) with good results.

Creamy Cabbage with Apples and Bacon

Very surprised how well the flavors blended together. It really does require the 30 mins cooking time for the flavors to meld. This combination does a good job of eliminating the sulfuric taste of cabbage. Didn't add sour cream, and it tasted great. Also used Canadian bacon instead of bacon and gala instead of Granny Smith apples (cut down the sugar though) with good results.
