About this Cook
I am the mother of two and struggle with adapting recipes to our organic lifestyle. I grew up eating a lot of casseroles made with condensed canned soups and I find it difficult to replace these in recipes. However, my husband, the pastry chef with culinary experience, really helps out in that department.
My favorite things to cook
I love to come up with new and tasty one-dish meals that contain at least two different vegetables, as well as the ever-present onions and garlic. I also like to make brownies.
My favorite family cooking traditions
Green Bean Casserole and Cornbread dressing for Thanksgiving - no croutons allowed. Homemade Hamburger Pizza - I refuse to eat restaurant hamburger pizza.
My cooking triumphs
I have developed a style of smelling an herb or spice and then adding it as I see fit. It usually turns out with tasty results.
My cooking tragedies
I once tried to bake an angel food cake in a regular cake pan - big disaster. I have a habit of scorching the food in the bottom of the pan and having to switch to a new pan - lots more dishes to be done.

Brooke's Best Bombshell Brownies
Reduced sugar to 1 1/2 cups and added some molasses (to make it brown sugar). Also used a generous 1/2 cup chocolate chips b/c it was what I had, and I think it was enough. Otherwise I made the recipe as listed and I really enjoyed it. Plan to make some cream cheese icing tomorrow to go with them.

Delicious Salmon
This was so good on my Salmon at lunch, I made up more and marinated my pork steaks for dinner. Got my kids to eat Salmon because it is slightly sweet and hubby loved it on the pork. I also sliced some onions to marinate and cook with the meat both times - delicious! I do think I will reduce sugar next time - I use organic cane sugar and it wouldn't all dissolve. Heated the marinade in the microwave to help dissolve sugar, then chilled it before putting over meat. I marinated the salmon about 30 mins and the pork for 2 hours - both were great. Cooked the Salmon in some of the marinade but did not leave extra when cooking the pork.

Ranch Dressing with Fresh Herbs
I love this recipe! I made it as a dip and not a dressing, using 3/4c sour cream and 1/2c mayo (no milk). My daughter will eat veggies dipped in ranch, so I need a healthy ranch dip. I omitted the shallot because it is so pricey and I did not want too much raw onion flavor. I also used the red, yellow and orange sweet baby peppers because I always have those on hand. I am certain I used a bit more than called for. Served it for a family gathering and everyone loved it.
