Taco Soup III

I made this for a surprise birthday party and quadrupled the recipe for 24 people. Everyone RAVED about it and asked me for the recipe! My only slight change when I make it again is that I will put slightly less taco mix - it was a tad too spicy for the younger kids. I will probably also double the hominy next time - I *love* hominy!! It was FANTASTIC - I definitely recommend it and I'm making it this week again.

Chicken Stuff

This was INCREDIBLE! I loved it so much. Even my 7 and 9 year old ate it without mentioning the mushrooms! lol! Here are my tweaks: *I doubled the recipe, but only used half the butter. *I substituted one can of cheddar cheese soup and used chicken broth instead of water. *I sauteed the mushrooms in a separate pan in 2 Tb of butter before I added them (I figured I could afford it after cutting back the butter by half!) *I also used a little lemon juice and freshly ground pepper instead of lemon pepper. I was actually surprised at how delicious it was for how easy it was. I definitely recommend it and will make it again! :D

Easy Hummus

I made this awhile back without the jalapenos, added a jar of artichoke hearts, adjusted the seasonings, and we all LOVED it! Last night I decided to make it again and I followed the recipe exactly. It was WAY too spicy, and I like spice. I added a second can of garbanzo beans, more liquid, some olive oil, a few drops of sesame oil, then another 1/2 tsp of cumin, and it was finally right! So - its great as a base if you add your own stuff, but not "as-is".

Chocolate Peanut Butter Pie

I first made this from the original recipe with no changes, and it was good, but the peanut butter layer was way too thick and way too sweet. It actually crumbled because it was so dry from all the powdered sugar. So when I made it again, I only put 2 cups of powdered sugar, doubled the chocolate pudding, and then I put a little of the peanut butter mixture into the chocolate pudding mixture. MMMMM! I also put less milk, using the "pie" instructions from the side of the pudding box. I entered it in a pie contest, and even though I didn't get 1st place, I had a few people tell me they would have given it first place because it was so delicious! Funny, when I came online today to print out the recipe, I noticed that the others who altered this pie made the same changes that I did. Guess it's a winner!

Kids Favorite Meatloaf

This is the best meatloaf I have ever eaten! It is very delicious and the family all loves it too. I have substituted home-made wheat bread crumbs for the cereal, or other kinds of high-fiber cereals work great too.

Orange Cilantro Rice

I thought this was delicious, but the kids hated it! They all thought it was "too spicy" or had a "funny taste"...so hence the 3 stars. I don't think it was spicy, but had an exotic flavor...mmm...
