Panzanella Salad Skewers

I made these for a recent camping trip, to rave reviews from the family (although they laughed at me for "going to the trouble" -but it really wasn't any trouble :-) I used rosemary skewers from the garden, and brushed it all with a garlic infused olive oil before grilling. I also forgot the pesto, but just happened to have some fresh basil (see why they laugh at me...)so just made a simple vinaigrette and sprinkled fresh basil over the top.

Mexican Style Shredded Pork

I'm reviewing this as a taster, not a cook...My husband prepared this for us without modifications, and it was very yummy! I used it in tacos to which I added some cheese and lettuce and a roasted pepper salsa I had on hand. I'm marking this one for future make ahead ideas for weekends away... so many possibilities

Chicken and Sun-Dried Tomato Bruschetta

Made this as part of a Mediterranean themed outdoor party. (Also did the grilled peaches with honey cream cheese from this site, and some grilled figs stuffed with blue cheese and wrapped in prosciutto, and a caprese salad and some grilled vegies). I used a garlic infused olive oil to brush the bread, and then rubbed the grilled slices with a cut clove as well. YUM! Everyone loved this.

Grilled 'Fusion' Pork Chops

We loved these too! I used a jarred ginger/garlic combo and added some cinnamon infused olive oil I had on hand. Also topped it with a sauce made by blending chopped mango, lime juice and some garlic chili sauce. Served with curried rice and some grilled zuchinni -YUM!

Campfire Potatoes

I also reduced the butter. Replaced the broth with white wine, as its a lot easier to use up leftover wine than leftover broth when camping, and traded out the parsley for a combination of fresh tarragon and chives from my garden. YUM! Leftovers made for great breakfast burritos the next day - sauteed the poataoes so they got a good crust and added eggs, bacon and salsa.

Grilled Peaches and Cream

I lightened this one by using a combo of reduced fat cream cheese and non-fat vanilla yogurt which I drained for several hours (use a strainer lined with cheese cloth or paper towel). Added chopped toasted pecans and honey. I used some plums and some peaches. It got rave reviews. I had some trouble separating the peach halves - recipe should probably specify using non-cling peaches. I ended up with one usable half from each peach, and one that turned to mush when I tried to twist it free.I ended up using the squished part to make some awesome peach mojitos though, so no worries :-)

Apple Pumpkin Muffins

These were great! I also did the healthy revisions suggested by other readers - applesauce for most of the oil, reduce sugar by 1/2 , and I used a large egg white in place of the second egg. I couldn't believe how light in texture these were for being all whole wheat flour. Next time I'm going to add some chopped pecans. The only reason I didn't rate this 5 stars is because I think the amount of sugar in the original recipe is totally unnecessary.....

Apple Bundt Cake

This was tasty, though I thought the texture was a little dense. Next time I might try separating the eggs and beating up the whites to fold in. I substituted Applejack brandy for the OJ, and pecans for the walnuts, and cut back on the sugar just a tad.
