Fruit, Veggie, and Tuna Salad Wrap

I enjoyed a bunch of different things about this wrap. 1-included fruit and veggies/good nutrition 2-low maintenance, cheap protein/meat 3-no cooking required 4-great for hot weather 5-my 3 yr old son liked it! 6-it was yummy!! This is definitely added to my list of "regulars." Thanks for sharing this recipe!

Quinoa and Black Beans

This was very simple and very good. This recipe was the first one from this website that I did exactly as written. I'm a complete wimp when it comes to hot/picante so I probably will lessen the cayenne to 1/8t. I tasted it before giving to my toddlers and then knowing that it would be too hot for them I put some sour cream in it and it toned down the heat and was quite yummy. This might be my new favorite quinoa recipe.

Beaker's Vegetable Barley Soup

Enjoyed the ease and health of this. I also enjoyed that I was running low on groceries and still could make this! I didn't have any regular barley so I threw in almost a cup of quick barley 20 min. before the soup was done. It definitely did not thicken the soup like regular barley would have. There was plenty of broth. Next time I will use regular barley. Didn't have curry so I put in chili powder like one reviewer did. I will be making this again.

Taco Seasoning I

I won't be buying taco seasoning from the store any more. This had such full flavor. I loved it. Plus, I think that there's too much salt in the pre-packaged stuff so it's nice to have some control about the amount of salt I want in it. Next time I make it I will lessen the amount of garlic powder a little bit but otherwise, this was perfect. Thanks for sharing this!!

Delicious Chicken Casserole

This was good and I will make it again. I tweaked it a bit because of lack of ingredients and because of other reviews. I didn't have celery so it wasn't made with the broth. I used four chicken breasts instead of bone-in. I doubled the amount of rice and slightly decreased the amount of sour cream. I didn't have the crackers it called for so I mixed about 1 1/2c bread crumbs with the butter, which was good but I'm gonna bet that the crackers would've been better. This meal was very creamy and I think I'll always make it doubling the rice. I really enjoyed the flavor of this dish. Thanks!

Peanut Butter Noodles

This was the first time I made anything like this and I really enjoyed it. so simple to make. I thought for sure my 2 & 3 yr old would love this but they didn't for some reason. I'll feed it to them in a couple of months to give it another go. I put the onions, added cilantro and lime juice only to my own dish. oh man, that was so good. i added some shredded carrots and little half and half to each of our bowls because that liquid actually dried up a bit. I used crunchy pb and added a 1/4c peanuts and i think next time i'll add even more peanuts! Also, I used angel hair pasta. I thought this was delicious. This seems to be a great I-don't-have-the-energy-to-make-anything-and-i-only-have-a-1/2 hour sort of dish!

Baked Eggs

This was pretty good. I cut the recipe in half and substituted 1/2 T liquid mustard for the 1/2 t dry mustard since i didn't have the dry on hand. I put it in a smaller pan and only cooked it for about 25 minutes. My kids gobbled it up and even my picky 2 yr old asked for 4ths! I might try sneaking in a veggie or even a little quinoa next time. That's what's fun about this recipe-you can play around with it. I'll be adding it into my breakfast meal rotation. Thanks!

Cheesy Beef Spirals

This was good. I think all the cheese made it seem kind of goopey. It was tasty though. I used fresh mushrooms instead of canned. My kids and hubby enjoyed more than I did so I'm sure I'll make it again and probably decrease the amount of cheese a little bit.

Turkey and Quinoa Meatloaf

This was pretty good. I've tried turkey loaf before and did not care for it. I would only stick to beef. But then I found this recipe and gave it another try. Especially since I just started cooking with quinoa. I was pleasantly surprised by how this turned out. I added about 1/3 cup of shredded ched. chez (but won't add that again since i couldn't really taste it) and added an additional egg. I also added bbq sauce to the sauce topping. The quinoa helped with the texture to make it more meatloaf-y. Instead of making it as a loaf, I made it into individual mounds and baked them for about a 1/2 hr. My toddlers even liked these so I will definitely be making them again.

Cheesy Chicken Quesadillas

I used canned chicken instead of cutting up chicken breast which made this recipe so super easy. I usually love using cream of whatever soups but for some reason I felt weird eating it in the quesadillas. My brain was telling me that it was too "casseroly"...go figure! Otherwise, I enjoyed the flavor and the ease of these quesadillas. If I need a last minute idea for supper I would make these again since I have most of these ingredients always on hand.

Easy Weeknight Tuna Pot Pie

I make this one a lot when I'm getting low on groceries. I also use a pie crust instead of crescent rolls and just bake it until the top of the crust is light brown. I also use 5 ounces of peas and 5 ounces of corn instead of mixed only because I never have mixed on hand. It's a good hearty pie and love to have this recipe to resort to when I'm low on groceries. Thanks for sharing!

Creamy Black Bean Dip

I really enjoy this dip. I've made it several times now and brought it to a Superbowl party and it was enjoyed by all. I almost think it tastes like there's beer in it. I feel like I could get away with calling it Beer and Bean Dip or something. It must be the mix of the balsamic and apple cider vinegar. Tried to first make it in my Magic Bullet but the mix is too thick so the food processor is definitely the way to go. Love that this dip is healthy.

Pizza Dough I

This is a great QUICK pizza dough. I normally love a rich doughy taste with homemade breads but the exchange on this one is the time. It's great when you want to make (or crave?!) pizza but don't have one, want to make pizza healthier or don't want to spend the money on a frozen one or delivery. I've made this a handful of times now and the ingredient amounts have worked each time. I haven't tweaked anything. Will continue to make! Thank you!

My Amish Friend's Caramel Corn

This is definitely the best caramel corn. With or without nuts. It's hard not to snack while you're making it! It's now my tradition to make this for Christmas every year and people love it each time. Thank you so much for sharing this recipe!

Coconut Rice with Black Beans

This was the first time I've used jasmine rice and I enjoyed it. SO much better than the brown rice that I use but don't really like. Like other reviews have said, the dish doesn't taste strongly of coconut but it gives it a rich taste, some depth to the rice. I used green onions instead of shallots since I didn't have shallots. Still good. I also put in salt and sugar as other reviewers suggested. My small kids didn't appreciate it as much as I hoped but they enjoyed tasting the coconut milk when I was making it so next time I think I'll stir in some coconut milk to coat it when it'd done cooking and hopefully they'll like it more. I've been wanting to add beans and rice to our menu more and was pleasantly surprised as to how full I felt after eating just one bowl.

Fudge Pie

I definitely loved the richness of this pie but for some reason my turned out pretty flat. It looked beautiful when it came out of the oven and then later looked pretty pathetic. The texture was of granulated sugar which I didn't mind but others might. The pie kind of seemed like a weird brownie in a crust. I'm probably doing something wrong and will probably try to experiment with it in the future.

Hawaiian Beef Casserole

We really enjoyed this meal tonight. I used fresh pineapple with no pineapple juice and I would consider decreasing the bean juice also. I put it in a 9x13 for 30 min instead of 45 (hungry kids!) and it was heated through well. This may also be yummy over some rice or with something starchy...according to my husband. But I thought it was delicious as is.
